Jalapeno Hushpuppies - These spicy little-fried nuggets of cornmeal are the perfect companion to any fried fish!

1 cup cornmeal
3/4 cup all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
1 tablespoon sugar
1/4 teaspoon baking soda
2 large eggs, beaten
1/2 cup buttermilk
1/4 cup diced onion
1/4 to 1/2 cup chopped jalapeno peppers ((as desired))
canola or vegetable oil for frying

Steps:

  • Whisk together the eggs and buttermilk, in a large bowl. In a separate bowl, whisk together the cornmeal, flour, baking soda, salt, and sugar. Add the wet ingredients to the dry ingredients, then add the onion and jalapenos and stir until incorporated and the batter is thick.
  • In a heavy-bottomed pot (Dutch oven) or deep fryer, heat enough oil to come halfway up the sides of the pot, to 360 degrees F.
  • Working in batches, drop the batter, 1 tablespoon (I use a cookie dough scoop) at a time, into the oil, being careful to not overcrowd the pot. Fry until deep golden on all sides, turning in the oil for even cooking, about 5 minutes. Transfer the hush puppies to a paper towel-lined dish and sprinkle with salt (if desired) while hot.

Hush puppies are a Southern classic! These homemade balls of fried cornmeal batter are quick and delicious. Serve with spicy dipping sauce!

¾ cup cornmeal
½ cup all-purpose flour
1½ teaspoons baking powder
½ teaspoon baking soda
¾ teaspoon salt
¼ teaspoon cayenne pepper
¾ cup buttermilk
2 eggs
¼ cup minced yellow onion
2 quarts peanut or vegetable oil (for frying)
⅓ cup sour cream
2 tablespoons mayonnaise
1 tablespoon Sriracha

Steps:

  • Make the Batter: Whisk together the cornmeal, flour, baking powder, baking soda, salt and cayenne in a large bowl. Whisk in the buttermilk, eggs and onion until combined. Let the batter sit at room temperature for 10 minutes, or up to 1 hour.
  • Make the Dipping Sauce: In a small bowl, whisk together the sour cream, mayonnaise and Sriracha. Cover and refrigerate until ready to serve.
  • Fry the Hush Puppies: Heat the oil in a large Dutch oven or deep cast iron skillet over medium-high heat to 350 degrees. Drop half of batter into oil in heaping tablespoons (I used a small cookie scoop) and fry until deep golden brown, 2 to 3 minutes, turning hush puppies halfway through cooking.
  • Transfer to a wire rack set over a double layer of paper towels and repeat with the remaining batter. Serve immediately. The hushpuppies can be refrigerated in an airtight container for up to 3 days.

From Gina and Pat Neely on Food Network. I saw them make this on Down Home with the Neely's and had to try it out. They're great! Gina made an orange dipping sauce but I just eat them plain, or with Ranch dressing or tartar sauce.

1 cup yellow cornmeal
3/4 cup self-rising flour
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon sugar
1 cup buttermilk
1 egg, beaten
1/4 cup shredded cheddar cheese
4 green onions, thinly sliced
1/2 small sweet onion, finely chopped
1/2 jalapeno pepper, finely chopped

Steps:

  • Preheat a deep fryer to 375.
  • Mix all ingredients together. Using 2 teaspoons, carefully drop about teaspoonful of dough into hot oil. Fry 3 to 4 minutes, turning hush puppy over to brown both sides.
  • Remove from oil when brown on both sides and drain on paper towels.
  • Repeat with remaining batter. Don't fry to many hush puppies at one time.

The first time I made this a couple of years ago, I wondered how this was going to turn out. It turned out good the first time, and then every time after that. I love it, and I hope you will too.

1 c yellow cornmeal
3/4 c self-rising flour
1 tsp salt
1/2 tsp sugar
1/2 tsp cayenne pepper
1/2 small, sweet onion, finely chopped
1/2 jalapeno, finely chopped
4 green onions, sliced thin
1 large egg, beaten
1/4 c grated cheddar
1 c buttermilk

Steps:

  • 1. Preheat deep fryer to 375 degrees F. (If you don't have a deep fryer, you can use a cast iron skillet, or a deep-sided electric skill or even a pot with oil, just check the temperature of the oil with a thermometer)
  • 2. Mix all the ingredients together into a large mixing bowl to form a thick batter.
  • 3. Dip 2 tablespoon spoons into water. Using the spoons scoop up some of the batter and drop into the hot oil. ( You can skip this part if you want, and just use a flatware tablespoon and scoop the batter into the oil).
  • 4. Work in batches. Fry for 3 to 4 minutes or until golden and brown. Remove and drain on a paper towel lined sheet tray.
  • 5. *Note* You don't have to add the jalapeno unless you want to. It will still taste good with the other ingredients.

1 cup yellow cornmeal
3/4 cup self-rising flour (if you don't have self rising flour, try Self-Rising Flour)
1 teaspoon salt
1/2 teaspoon sugar
1/4-1/2 teaspoon cayenne
1/4-1/3 cup vidalia onion, finely chopped (about 1/2 small onion, may use other sweet onion)
1/2 jalapeno, finely chopped (or 2-3 tbls. canned diced green chilies for less heat)
6 small green onions, sliced thin (or 4 larger ones)
1 large egg, beaten
1/4 cup grated sharp cheddar cheese
1 cup buttermilk
1/2 cup Dijon mustard (or whole grain mustard)
1/2 cup honey
1/2 cup orange marmalade

Steps:

  • Preheat a deep fryer to 375* F. (I just use a saucepan and fill about 2-3" with oil.).
  • Mix all the ingredients together in a large mixing bowl until it becomes thick.
  • Using 2 tablespoons, dip into water. Scoop up about a tablespoonful of the batter and using the other spoon, push off the batter, drop into the hot oil. You can work this in batches. Fry for 3 to 4 minutes or until golden brown. Remove from oil and drain on a paper towels. Serve with dipping sauce.
  • To make the dipping sauce, mix all the dip ingredients together in a bowl. This doubles easily! Enjoy!
