BEST EVER FRIED CHICKEN WINGS

- Using a sharp knife, cut through the 2 wing joints; discard wing tips. Pat chicken dry with paper towels. Toss wings with kosher salt. Place on a wire rack in a 15x10x1-in. baking pan. Refrigerate at least 1 hour or overnight., In an electric skillet or deep-fat fryer, heat oil to 375°. Fry wings in batches until skin is crisp and meat is tender, 8-10 minutes. Drain on paper towels., For Buffalo wing sauce, bring hot sauce just to a boil in a small saucepan. Remove from heat; whisk in butter 1 piece at a time. Stir in molasses and cayenne pepper., For Thai sauce, heat oil in a small saucepan over medium heat. Add ginger, garlic and chile pepper; cook and stir until fragrant, about 2 minutes. Stir in brown sugar and lime juice. Bring to a boil; cook until slightly thickened, about 5 minutes. Stir in cilantro and fish sauce., For barbecue sauce, heat prepared barbecue sauce in a small saucepan over medium heat. Stir in chipotle peppers, honey and vinegar. Bring to a boil; cook and stir until slightly thickened, about 5 minutes. , Toss wings with 1 of the sauces. If desired, sprinkle with green onion slices.

- Heat oil in a deep-fryer or large saucepan to 400 degrees F (200 degrees C).
- Place flour in a bowl. Whisk eggs, 1 bottle hot sauce, and water in another bowl until smooth. Season chicken with garlic powder, salt, and pepper.
- Dip each wing into the egg mixture, then toss with flour mixture to coat. Gently shake off excess flour and set aside. Repeat with remaining chicken.
- Fry chicken in the hot oil in batches until chicken is no longer pink at the bone and skin is golden brown, about 5 minutes. Drain in a large bowl lined with paper towels, then season with salt.
- Heat butter and remaining bottle hot sauce in a saucepan over medium-high heat until butter is melted. Whisk until smooth. Remove paper towels from bowl and pour butter sauce over chicken; toss to coat.

BARBECUE HOT WINGS RECIPE

Steps:
- First, I always wash my chicken. Then I put down a piece of foil, and place a paper towel on top of it to dry my chicken.
- Always rememeber to bleach down your countertops and sink, you don't want any contamination from the chicken.
- Now, I'm going season my chicken. I like to use salt, pepper, and since I'm Southern, I also use Texas Pete Hot Sauce.
- After you finish seasoning your wings, you will want to put oil in your pot. *Do Not Flour Your Chicken*
- Add your chicken wings to the hot oil, in order to begin frying them.
- When your wings begin to bubble to the top, remove them from the pot.
- You will want to butter a pan and then add your wings.
- Add your choice of barbecue sauce and more hot sauce if desired. Place them in the oven on 350 degrees for about 5 minutes. Your wings are already done, so don't leave them in any longer. They're placed in the oven, in order to get a nice sear on them.
- When your wings are done, carefully take them out of the oven and allow them to cool.
HOT AND BOTHERED WINGS
They are hot, and they are messy, cook the chicken on the grill for the best results, but you can fry them too. If you like hot wings, you will love these babies. Make sure you serve them with plenty of napkins, and cold beer.

- Cook the wings as desired, I grill them, until cooked through, and crispy.
- meanwhile, melt the butter in a skillet, and then add the rest of the ingredients. Stir until well mixed, and turn heat off. Place cooked wings in a bowl with a lid and add sauce, cover and shake until the wings are well coated. Serve with blue cheese, or ranch dressing, and some cold beer!

- In a large bowl or plastic bag mix all dry ingredients. Add wings, toss to coat and set in refrigerator for 30 minutes.
- In a small sauce pan add franks hot sauce, cholula, and butter. Cook over low heat until butter melts. Remove from heat.
- Heat oil in a large frying pan over medium heat until hot.
- Add about half of wings (DO NOT CROWD PAN) and cook until brown about 7-8 minutes. Flip wings over and brown the other side. Cook until wings are golden brown on both sides, adjusting heat as needed to brown wings.
- Remove wings to a big bowl and toss with hot sauce.
- At this point wings can be eaten immediately or moved to a cookie sheet and kept warm in a 200 degree oven.
- Serve with blue cheese or ranch to cut heat.
