HORSERADISH BUTTER

- Pulse 1 stick softened butter in a food processor with 1/3 cup chopped chives, 3 tablespoons horseradish, 1 teaspoon salt and 1/2 teaspoon lemon zest until smooth. Scrape the butter onto plastic wrap or parchment, wrap and shape into a log. Chill until firm. Slice and serve over grilled steak.
- TIP: Try making other flavored butters with odds and ends from your fridge: capers, pickles, olives or even hot sauce.
PARSLEY-LEMON BUTTER
Once you start playing with flavored butters, there's no going back. This parsley and lemon variety has a hundred uses from fish to steamed broccoli, but you might find yourself simply spreading it on crusty bread most often.

- Using your fingers or a small fork, evenly blend the zest and parsley into the butter. If you are going to use the butter in a few days, pack it into a ramekin, cover the top with plastic wrap and then cover it again with foil. Refrigerate until ready to use. If you are going to freeze the butter for future use, roll it into a small log, snuggly wrap it with plastic wrap and then wrap it again with foil. Place the log in a freezer storage bag before placing it in the freezer. Thaw in the refrigerator prior to using. Use it on steamed vegetables, mashed or roasted potatoes, rice, fish or chicken. Victoria's Notes: Let your senses be your guide when it comes to making these butters. Add more or less of the herbs and citrus to suit your palate. It's fun to experiment with other flavor combinations with or without the citrus zest. Try tucking cilantro with lime zest butter under the skin of chicken breasts before you roast them, use French tarragon with orange zest butter for topping halibut, place a pat of thyme and lemon butter on steamed carrots, serve a chive studded butter with baked potatoes, or garnish a grilled steak with a tiny bit of butter flavored with very finely chopped rosemary and coarsely grated black pepper.

- Heat broiler, with rack 8 inches from heat. On a rimmed baking sheet, toss celery root and carrots with oil and arrange in an even layer. Pat steaks dry and add to sheet; season vegetables and steaks with salt and pepper. Broil until vegetables are tender and steaks are browned, 8 to 10 minutes, flipping vegetables halfway through. Tent steaks with foil and let rest 10 minutes.
- Stir together butter, horseradish, and mustard; season with salt and pepper and spread on steaks. Sprinkle with chives to serve.

- First, make the dressing. Mix the vinegar, shallot, sugar, salt and pepper in a bowl, then whisk in the olive oil. Tear the salad leaves into bite-size pieces and set aside. Now, heat a griddle pan to high.
- Brush the steaks lightly on each side with oil, then season with salt and pepper. Griddle for 2-3 mins on each side, until cooked to your liking. Toss the salad in the dressing. Top each steak with a few slices of Horseradish & chive butter, then serve with the salad.

HORSERADISH BUTTER (PEPPERROTSMOR)
This flavoured butter is from Norway. Traditionally you serve it cold with hot grilled or fried fish. Alternatively, do what I do and mix a few spoons into mashed potato (I've been known to add extra horseradish too) or mashed swede (rutagaba), MMmm! - Preheat oven to 400°F. Cut off and discard tip of garlic head, exposing tops of cloves. Drizzle trimmed garlic head with 1 tablespoon oil, and wrap tightly in aluminum foil. - Lay a large strip of cling film out on the bench , spoon the butter into a rough log onto the long edge of the cling film. (It will take up the centre 3rd of the the cling film. Carefully roll the cling film around the butter, then pinch the ends together and keep rolling it tight until you have a nice tight log.
