GREEK HORIATIKI SALAD
This is the one and only Greek salad recipe that you'll ever need! Enjoy this Greek salad for summer BBQs, Greek dinner parties, picnics, and more. Ripe, red tomatoes will yield the best result. Serve with loads of good crusty bread to mop up the gorgeous juices.

Steps:
- Cut your tomatoes into wedges over the bowl that you're serving the salad in, so that any extra juices land in the bowl. Add onion slices. Liberally season with salt and oregano. Mix and allow tomatoes to sit at room temperature for at least 30 minutes, up to 2 hours, so that the salt releases the tomatoes' juices.
- Mix in feta cheese, cucumber, bell pepper, and olives just before serving. Stir everything together. Drizzle with olive oil.

"HORIATIKI SALATA" GREEK VILLAGE SALAD
This summer salad is on the menu in every Greek restaurant and many non-Greek restaurants as well, this salad has many individual variations, but here are the basics to work from. This is the traditional version that does not include lettuce.

Steps:
- 1. Wash and dry the tomatoes, cucumber, and green pepper. Clean off the outer skin from the onion, wash, and dry. Cut the tomatoes into bite-sized irregularly shaped chunks, removing the core. Note1 Many cooks peel the tomatoes if the skins are tough; it's a personal call. Note2 I would taste the feta cheese before adding salt to the salad as feta cheese is usually a salty cheese.
- 2. Slice the cucumber into 1/4-inch slices, cutting slices in half (whether or not you peel the cucumber is a personal choice). Salt lightly. Slice the pepper into rings, removing the stem and seeds. Slice the onion into thin rings.
- 3. Combine the tomatoes, cucumbers, green pepper and onion in a large salad bowl. Sprinkle with oregano, pour olive oil over the salad, and toss. Just before serving, place the feta on top of the salad , either as a slice (as in photo) or crumbled , and toss in some olives.
- 4. Sprinkle the cheese with oregano (and pepper if desired). Drizzle the oil over the top, and serve. Additional ingredients: Capers: toss in a few if you like them.

Steps:
- Cut tomatoes into wedges.
- Slice cucumber in 1/2 lenghtwise then in cut in chunks.
- Wash, core and seed peppers. Cut in half then cut into thick strips.
- Separate onion slices into rings.
- Place prepared ingredients in a bowl; top with the olives.
- Pour on dressing just before serving.Top with strips of Feta Cheese and sprinkle with oregano.
- For dressing: Put ingredients a screw top jar, seal and shake well.
- Shake again just before serving.
- Serve in individual salad bowls.

- Cut the tomatoes into wedges. Peel the cucumber to create a striped pattern (optional). Slice into 1/4 inch thick rounds, and then into half moons.
- Core and seed the bell pepper, and cut into thin round or strips, whatever you prefer. Slice the onions thinly. If you do not like raw onions, you may soak the onion slices in ice cold water for 10-15 minutes, drain and then use in the salad. This step removes the pungency of the onions. If you do this step, then start off by slicing the onions first, and let it soak while you prep the other veggies.
- Drizzle olive oil and red wine vinegar. Sprinkle dried oregano along with a tiny pinch of salt (not much, since feta is already salty) and toss everything gently.
