HOPSCOTCH TREATS
"When the mood for something sweet strikes, I turn to these crunchy snacks packed with butterscotch flavor," reports Gayle Becker of Mt. Clemens, Michigan. "I usually have all the ingredients on hand, and they're so easy to make. Our toddler likes to help mix the dry ingredients and lick the bowl."

HOPSCOTCH
My grandmother's recipe says "Chinese noodles." These are the dry noodles that come in a can. I think one brand in her day was Chung King. They might be called chow mien noodles but you want the dry ones that come in a can. This is fast, easy, no baking, and very rich.

Steps:
- 1. Melt the butterscotch chips in your microwave, just watch closely not to overheat. I can't put a time on it as all microwaves are different. Just stir and check every few seconds, until it's melted and smooth.
- 2. Stir in the peanut butter. Mix the noodles and marshmallows together in a bowl. Add the butterscotch mixture and mix thoroughly.
- 3. Drop by heaping teaspoons onto a wax paper lined cookie sheet. Chill until set. Enjoy! (no need to refrigerate once set unless you want to) Store in air tight container or candy tin, These make a great surprise for friends and neighbors, a little something to make them smile!
HAYSTACKS
I have made these cookies for my family for about 30 years now. My son (who is now 36 years old) gets so excited when I make these; he always enjoys them with a tall glass of milk. I find that I have to be careful when melting the butterscotch because it seems to scorch easily, so take care - this is an essential ingredient! Also, these are best enjoyed in the winter because they seem to melt and not taste as great in the warmer weather.

AUTHENTIC BUTTERSCOTCH CANDY
Back in the mid-ish 1800s, a British confectioner went and visited Italy and apparently was both saddened to find that their sweets were better than what was available in England and inspired to Fix That. Butterscotch is what he came up with. Good show, old man. This recipe makes a relatively soft candy that should be stored in the refrigerator. See the notes for the temperatures to cook it to get everything from a sauce to a much firmer candy.

Steps:
- Cut a strip of non-stick foil to the same width as the bottom of an 8" or 9" baking dish. Line the pan, making sure the edges of the foil extend up and over opposite sides of the pan. Don't worry about the unlined sides.
- Spray the whole shebang very well with pan spray, especially the unlined sides. Set aside on a heat-proof surface.
- In a medium saucepan, melt the butter over medium-low heat.
- Stir in the sugar, molasses and salt.
- When the mixture is good and liquidy, increase the heat to medium to medium-high, and bring to a boil, stirring occasionally.
- Cook the candy to 250F and then pour into your prepared pan.
- Let sit out until barely warm, and then score the candy into 1" squares for later cutting. Run a thin spatula between the unlined sides of the pan and the butterscotch, and put it in the fridge to firm up completely.
- Remove to a cutting board sprayed with pan spray, and cut into whatever shapes you want. This will make about 64-81 pieces of butterscotch, depending on how you cut them. Or it might only make four pieces, but I wouldn't advise that.
- Store, covered, in the fridge.

- Using room temperature butter, line with parchment and thoroughly butter a 9x13x2-inch pan. For the easiest removal, use a disposable aluminum baking pan that you can twist to pop the bars out of, making extra sure that all the nooks and crannies are well buttered.
- Make Layer 1, Bottom ChocolateLayer: In a saucepan over low heat or a heatproof bowl in the microwave, melt the chocolate and peanut butter together, stirring until smooth. If you are using the microwave, heat in 2 (30-second) bursts. Remove from the oven and stir until all the chips have melted. There is plenty of residual heat in the bowl.
- Pour into the prepared pan and spread to cover the bottom evenly. It may not seem as though you have enough, but there is plenty for a nice layer. Set aside to cool and harden completely. Set the bowl you used aside to be used again for the final top chocolate layer.
- Make Layer 2, the Nougat Layer: Melt the butter in a saucepan over medium heat. Add the sugar and milk; stir until dissolved and then bring to a boil. Cook for 5 minutes, stirring occasionally. Stir in the marshmallow fluff, peanut butter and vanilla; continue stirring until smooth. Remove from the heat and fold in the peanuts. Pour over the bottom chocolate layer. Let cool completely.
