HOOTENANNY PANCAKES
"Volcano Pancakes" may be a more appropriate name. The pancake will rise a few inches above the pan while baking. My family says the tall sides are the best part. This is fast, simple, and delicious and it's so easy to have the ingredients on hand. I got this from another website and am posting it for my cookbook.

Steps:
- Preheat oven to 425 degree F.
- Put entire stick butter into a 9 x 13 inch pan.
- Put pan with butter into the oven until butter is melted.
- Beat the eggs, milk, and salt until frothy.
- Add flour.
- Beat until mixed.
- Pour over melted butter.
- Bake for 25 to 30 minutes.
- Serve with syrup or jelly.

Kinda like a pancake/French toast recipe all in one dish. My kids always loved it. And it is very easy!!!

Steps:
- Mix above in blender. Melt 1 stick margarine in a 9 x 13 oven proof dish while oven is heating. Pour mixture into HOT dish. Bake 25 minutes at 425 degrees or until knife comes out clean. The Hootenanny should rise up and out of the pan.
- Sprinkle with powdered sugar. May add cinnamon if desired. Serve with maple syrup.

Another childhood treat! Don't know where the name came from, but it's so moist and yummy! I spread mine with a cream cheese frosting, due to family request...it's also great without!

Steps:
- 1. Preheat oven to 350 degree F. Spray or grease a bundt pan. In a large bowl, mix first six ingredients for 5 minutes. Mix nuts, sugar and cinnamon. Sprinkle 1/3 of nut mixture in the bottom of bundt pan. Next, spread half the cake batter evenly into pan. Sprinkle another 1/3 nut mix evenly over batter. Spread remaining batter over nuts and sprinkle remaining nuts on top.
- 2. Bake for 45 - 50 minutes or until pick comes out clean. Cool and remove from pan onto favorite serving plate. Can glaze if desired.
- 3. I glazed with a mixture of 1/2 stick butter, 4 oz cream cheese, 1/2 tsp vanilla and two cups confectioners' sugar. Add some milk or cream to thin out to desired consistence!

Steps:
- Place butter in a 9x13 pan in oven at 400 degrees until bubbly. Beat together remaining ingredients and pour into pan. Bake 25-30 minutes. Cut into squares and serve with syrup. Note: As this bakes, it goes up the sides of the pa, but it won't run over.

- Place the Bisquick™, milk, and eggs into a blender. Blend for 1 minute, until fluffy and smooth. Cover tightly and place in the fridge.

- Preheat oven to 400°F. While oven preheats add 6 tablespoons butter to a 9"x13" cake pan or baking dish and place in the oven as it warms, just until the butter has melted. Remove and set aside.
- Add the thinly sliced apples, brown sugar, cinnamon and 1/2 teaspoon salt to the melted butter. Toss together and spread apples evenly over the bottom of the pan. Return to oven and bake for 15 minutes, until the apples have softened.
- Meanwhile, mix the pancake batter together either by hand or in a blender. Vigorously whisk the eggs, milk, vanilla and remaining half teaspoon of salt together until light and frothy. Blend in flour until combined. Set aside until the apples have finished baking.
- Pour the batter into the hot pan, directly over the baked apples. Carefully transfer back to the oven and bake for another 20-25 minutes until the edges have started to brown and the center has puffed up and set.
