BEEF TIPS & GRAVY
Tender chunks of beef in a rich brown gravy. This meal is perfect over mashed potatoes.

Steps:
- In a large pot or dutch oven, heat 1 tablespoon olive oil over medium-high heat. Season beef with salt and pepper and brown in small batches. Remove beef from the pot and set aside.
- Turn heat down to medium, add remaining oil and onion. Cook until softened, about 10 minutes.
- Add beef, broth, soup, Worcestershire sauce and bay leaf to the pot. Bring to a boil, cover and reduce heat to simmer 1 1/2 to 2 hours or until beef is fork tender.
- To thicken gravy, combine cornstarch with 1/3 cup cold water. Pour into the beef a little at a time while stirring until it reaches desired consistency.
- Taste and season with salt and pepper. Discard bay leaf and serve over mashed potatoes.

GENUINE HOMEMADE BEEF AND NOODLES
This meal is an Iowa-thing. Yes, it's carb overload, but the tender egg noodles cooked in the meaty broth is absolutely heavenly. Traditionally it's served over mashed potatoes because the more carbs the better.

Steps:
- Brown the meat in a little vegetable oil
- Add the water, onions, salt & pepper
- Pressure cook in Instant Pot or equivalent for 1 hour with a natural release
- Optional - simmer browned meat/water/onion mixture on the stovetop for 2-3 hours
- Homemade egg noodles
- Mix ingredients together to form a tacky dough.
- Roll out on a pastry cloth (must use) to cover the entire cloth surface, until dough is
- Cover the rolled out dough with a light towel and dry for 2-3 hours
- Roll dough into a jelly roll and slice into noodles 1/4 inch wide.
- Spread hand-cut noodles over the cloth and allow to dry for another 1-2 hours.
- Bring beefy broth to a boil (I use a separate pot - not the Instant Pot)and add noodles, cooking 15-20 minutes.
- Serve over mashed potatoes

I lived in California for 28 years and completely forgot about this Indiana staple. Yes, farm families really do eat this much starch in one meal. And it is REALLY GOOD COMFORT FOOD. Grandma made it often, especially during cold months.

- 1. Add oil to a large Dutch Oven over medium heat. Sprinkle the flour over the meat and toss to evenly coat cubes with flour. Brown half of the coated meat in hot oil. Remove from pan. Brown the remaining meat and remove. Set aside.
- 2. In the same pan, brown the onion and garlic, adding more oil, if necessary. Drain off any excess fat. Return all meat to the pot. Stir in the broth, bay leaf, salt, and pepper. Bring to a boil; reduce heat. Simmer, covered, for 1-1/2 to 2 hours or until meat is tender.
- 3. When meat is tender, remove with a slotted spoon and set aside to cool briefly. In the meantime, stir noodles into broth. Bring to a boil; reduce heat to low. Shred beef and add back to pot with noodles. Cook, uncovered, for about 30 minutes or until noodles are tender and mixture is thick. Add additional broth or water if necessary (if noodles are absorbing it all). Add salt and/or pepper if needed. Remove bay leaf.
- 4. Serve beef and noodles over hot mashed potatoes.
GROUND BEEF AND MASHED POTATO CASSEROLE
A quick and economical crowd pleaser! Hearty and filling with an added extra benefit of veggies hidden in the midst of kid-pleasing, yummy mashed potatoes, ground meat, and mounds of melted cheddar cheese! Great for get-togethers, pot-luck luncheons/ dinners, for sports crowds, or even for kids who are not big veggie-eaters! Nice for busy cooks who like easy-to-reheat leftovers that taste better the next day!

- Preheat the oven to 350 degrees F (175 degrees C). Spray the bottom and sides of a 9x13-inch baking dish with cooking spray.
- Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Add yellow onion, bell peppers, celery, and 1/2 of the green onion; saute until vegetables are soft, about 5 minutes. Add garlic, tomato sauce, 1/2 of the parsley, paprika, garlic powder, onion powder, red pepper flakes, meat tenderizer, salt, and pepper; cook until fragrant, about 1 minute. Stir in Worcestershire sauce and browning sauce. Drain oil and remove from the heat.
- Line the prepared baking dish with refrigerated biscuits; divide them evenly and spread out to cover the pan, overlapping if necessary. Spread drained ground beef mixture evenly on top of the biscuits. Spread diced tomatoes over the beef, then evenly scatter frozen vegetables. Spread mashed potatoes over the top, and sprinkle with remaining green onions, Cheddar cheese, and remaining parsley. Cover with foil.
- Bake in the preheated oven for 25 to 30 minutes. Remove foil and bake until cheese is golden and melted, another 5 minutes. Serve immediately.

- Heat a skillet over high heat. Add 1 tablespoon olive oil. Season chuck roast with salt and pepper, then sear in the skillet for 3-4 minutes, until browned. Flip and repeat on the other side. If your slow cooker has a "Roast" or "Sauté" setting, you could use this.
