SWEET AND SOUR SPARE RIBS
Chinese Sweet and Sour Ribs have an excellent taste. This version is an simplied one that can be made at home easily.

Steps:
- Cut ribs into 1 inch to 1.5 inch sections. Place in a pot with cold water. Bring to boil and continue cooking for 2-3 minutes. Transfer out and rinse under running warm water. Set aside to drain.
- Add cooking oil and smashed rock sugar in wok, heat over slow fire. Keep stirring until the sugar melts and turns into dark red.
- Add ribs to coat the sugar color, place light soy sauce, cooking wine and black vinegar. Continue stir fry for 2 minutes and pour enough hot water to cover and add ginger, green onion and star anise.
- Cover the lid and simmer for 25 minutes over slowest fire. Stir once or twice in the process. Pick the ginger, green onion and star anise out in the later stage.
- Turn up the fire and thicken the fire. Keep stirring and stop when the sauce is almost adhered to the ribs. Be carefully in the last minutes, do not get your ribs overcooked.
- Add extra 1 teaspoon of black vinegar and sesame seeds. Combine well.
- Garnish chopped spring onions before serving.

Very easy and tasty oven cooked ribs. It's too cold to grill in winter, so I will do these everytime.

- Roll ribs in flour mixed with salt.
- Brown well in fat in heavy pan.
- Combine ginger, garlic, soy sauce and lemon juice and pour over ribs.
- Cover and bake in preheated moderate oven (325 degrees) for 2 hours, basting frequently with the sauce.
- Uncover and bake or broil a few minutes longer to crisp the ribs.
- Ribs may be soaked in soy sauce before browning to intensify flavor.

- Rinse the pork ribs and drain them well. Put them in a bowl and add the soy sauce, rice wine, salt, sugar, cornstarch and oil, then mix thoroughly. Leave at room temperature while preparing the other ingredients.
- Mince the garlic. Slice the banana chilli on the diagonal into 3mm (⅛in) pieces. Cut the bird's-eye chilli in half lengthwise and scrape out and discard the seeds. Slice the chillies into 3mm (⅛in) pieces. Mix the garlic and both types of chillies with the pork. Spread the ingredients in a shallow heat-proof serving dish.
- Place a metal rack with low feet in the bottom of a wok and add water to the depth of about 4cm (1½in). Heat over a high flame until the water boils. Place the dish of pork on the rack, cover with the lid and steam over a medium-high flame for 20 to 30 minutes.
- While the pork is cooking, mince the spring onions. When the pork is fully cooked, sprinkle the spring onions on top and serve with steamed white rice.

- Place ribs (you may cut racks in half if you don't have huge bags, but don't cut into individual ribs--you do that after the final cooking) in a large zipper freezer bag and pour in marinade. Seal bag and turn a few times to coat the ribs. Place bag(s) in the refrigerator overnight.
- Remove ribs from the bag and drain well. For slow cooker and Instant Pot cook methods, reserve the marinade.
- Ribs may be cooked in several ways. Slow cooker--add a cup of marinade to the crock along with the ribs and cook on low for approximately 5-6 hours. For Instant Pot, place the ribs in the pot along with a cup of marinade then cook on high pressure for 12 minutes. Release pressure immediately. For the oven, place ribs on rack and bake at 350F/180C for 90 minutes. For indirect grilling, place ribs on the unlit side of the grill and roast for 2 hours.

- In a large bowl, combine flour, salt and pepper. Toss ribs in seasoned flour, shaking off excess.
- Warm oil in a large skillet over medium-high heat. Working in batches, cook ribs, turning with tongs, until browned on all sides, about 10 minutes. Transfer ribs to slow cooker. Pour off all but 1 Tbsp. fat from skillet. Add onion, ginger and garlic to skillet. Cook, stirring often, until slightly softened, 2 to 3 minutes. Pour in broth, increase heat to high and bring to a boil, stirring with a wooden spoon to pick up any browned bits on bottom of skillet. Stir in hoisin sauce, soy sauce and five-spice powder until well combined. Pour contents of skillet over ribs in slow cooker.
- Cover and cook until beef is very tender, with slow cooker on low for 6 to 8 hours or on high for 3 to 4 hours. Remove ribs to a platter. Skim as much fat as possible from cooking liquid in slow cooker; discard fat. Spoon remaining liquid over ribs and serve hot.
