Ingredients

1 bottle (750 mL) chilled Cava or Prosecco
2 to 4 cups chilled pulp-free orange juice

Steps:

While holding your Champagne flute at a slight tilt, fill the glass about halfway with sparkling wine.
Fill the rest of the glass with orange juice, and serve promptly. Feel free to adjust the ratio of sparkling wine to orange juice to suit your preferences (I like my mimosas with more sparkling wine than orange juice).

¾ cup champagne, chilled
¼ cup orange juice

Steps:

Mix three parts of your favorite sparkling white to one part of your favorite orange juice. Enjoy!

Combine the diced honeydew melon with the lime juice and sugar in a blender and blend until you obtain a smooth puree.
Strain the puree, chill for at least 30 minutes or until ready to use. A couple hours is ideal. For an extra smooth puree that is less likely to make the drinks overflow when mixed with the sparkling wine, strain the honeydew puree a second time after chilling. Then chill again for a few hours. It makes a significant difference.
