HONEYDEW MOJITOS
We've never met a mojito we didn't like, and this blended version might just be our new go-to. Combining the whimsy of a frozen beverage with the fresh, minty flavor of a mojito, our Honeydew Mojitos make the most out of one of the season's brightest melons.

Steps:
- Cut lime lengthwise into quarters. Using a knife, remove center white pith from lime wedges; discard. (Do not remove the peels.)
- Place lime wedges, melon cubes, rum, mint leaves, and Simple Syrup in a blender. Process until mixture is smooth, about 1 minute. Pour through a fine mesh strainer into a measuring cup or a bowl, stirring and pressing lightly on solids to extract as much juice as possible. Discard solids.
- Fill 4 glasses with ice cubes. Pour ¾ cup strained mixture into each glass. Top with ¼ cup sparkling water; stir. Garnish glasses with lime slices and mint sprigs.

- Place the cucumber and honeydew melon chunks into a large bowl. Whisk together the vegetable oil, lemon juice, and sugar in a small bowl until well blended. Pour dressing over the cucumber and melon; mix well. Allow to rest for 1 hour before serving.
