Steps:
- 1. Preheat the oven to 425 degrees F. 2. Melt the butter in a 10-inch skillet over medium heat and cook until lightly browned. Remove from the heat. 3. In a large bowl, combine the apples, brown sugar, flour, maple syrup, vanilla, lemon juice, cinnamon, ginger, nutmeg, salt, and apple cider. Pour the mixture into the skillet with the butter and toss to evenly coat. 4. Place the pastry over the apples and press down gently to secure, tucking the sides of the pastry under the apples as best you can. Brush with the beaten egg and sprinkle with coarse sugar. Place the skillet on a baking sheet and bake for 20 minutes. Remove from the oven. Using a sharp knife, cut the pastry into large squares to create the "pandowdy". 4. Reduce the oven temp to 350. Return the skillet to the oven and continue baking for another 20 minutes, or until the sauce is bubbling up through the cracks of the pastry. If needed cover the top with foil to prevent burning. Spoon the heavy cream over top and then return to the oven for another 10 minutes to "set" the cream. The pastry will turn a dark golden brown. 5. Using a spoon, press the pastry down into warm juices, but don't submerge. Serve warm with ice cream. ENJOY!

HONEY CRISP APPLE PIE
These apples were a gift from my neighbor. Since I already had 2 pounds of sliced apples in the fridge, I decided to use these in a pie. I had never used Honey Crisp in a pie , so this was a bit of an experiment that went very well. My husband loved this pie. He had sort of hinted that he would like one so I surprised him with...

Steps:
- 1. Preheat oven to 425 degrees F. Wash peel core and slice apples into thin slices. This is basice Apple Pie recipe. I did a bit of research to learn about these delicious tasting apples, and found they are considered an all purpose apple, so they worked great in my pie, and are great in cakes as well.
- 2. Add apples to a large bowl. Then combine sugar and spices with flour in a separate bowl and stir to blend together.
- 3. Pour sugar mixture over apples, and stir to blend in then sprinkle with the lemon juice and stir till thoroughly mixed together.
- 4. Unroll pie crust and position into a 9 inch glass pie plate. Press down to conform to pie dish.
- 5. Fill pie crust with sliced apple mixture. Then top with second crust. Tuck the edge of top crust to the bottom edge of the base crust then crump together.
- 6. Now brush top of crust with evaporated milk or an egg wash. Make 5 or 6 slits in top of crust so steam can escape during cooking. Then sprinkle top with decorators sugar.
- 7. Place pie plate on a shallow baking sheet to catch any potential drips during baking. Then place in preheated 425 degree oven and bake for 20 minutes. After 20 minutes, you may want to cover the edge of pie with aluminum foil to prevent over browning of the edges. Then continue baking for an additional 30 minutes, or until top crust is golden brown.
- 8. Remove pie from oven and allow pie to cool for at least a few hours before cutting. Serve plain as is or with your favorite ice cream.

- Roll out your chilled pie dough into a disk about 1/4 inch thick and an inch or so larger than your pie dish. Transfer the dough into the pie dish leaving half an inch of overhang. Trim the edge as needed then fold under and crimp the edge. Transfer to the freezer to chill while you make the filling.
- Add the flour, salt, sugar, and cinnamon to a bowl then mix until combined. Pour in the melted and cooled butter then mix once more. If the butter is too warm the mixture will form a glob instead of crumbles.Just pop in the fridge to chill a few minutes and break up with your hands if that happens.
- Peel, core and slice your apples, then toss with the lemon juice. Cut your apples into similar sized pieces so they cook at the same rate.
- Heat oven to 400F. Mix the egg and cream, or milk in a small bowl then Brush the edge of the pie with it. This is optional but gives your crust a golden finish.
