If you get tired of store-bought peanut butter and almond butter, why not make your own walnut butter? It's so easy! Mollie Katzen adds a little cinnamon and honey! It's best to refrigerate since there are no preservatives.

1 cup walnuts
1/2 teaspoon salt
3 teaspoons walnut oil (preferable roasted walnut oil)

Steps:

  • Preheat oven to 350 degrees.
  • Spread nuts in one layer on a baking sheet. Toast until fragrant and lightly colored, about 10 minutes. Stir about halfway through the baking time.
  • Add nuts to a food processor, discarding any dried skin and dust. Add the salt and chop the nuts finely. With the motor running, drizzle in the oil. Whirl until the nuts are ground into butter, stopping to scrape down the sides two or three times.

Super easy to make and incredibly delicious, these Candied Walnuts are glazed with honey and have a touch of butteriness.

2 tbsp unsalted butter
2 cups walnut halves
1/3 cup raw honey
1/8 tsp sea salt (*if using salted butter eliminate salt)

Steps:

  • Prepare a sheet of parchement paper or lightly spray a silcone baking mat. Set aside.
  • Preheat a large frying pan over med/high heat. Add butter, walnuts, salt and honey. Stirring consistently, cook until nuts have toasted and honey has caramelized, about 3 minutes.
  • Transfer hot nuts onto parchment or baking mat. Spread evenly to let cool. When nuts have cooled to room temperature and are slightly tacky seperate nuts to avoid sticking together. Store in an airtight container once nuts have fully cooled and are no longer tacky.

1 tablespoon butter
3 tablespoons honey
1/8 teaspoon cinnamon (optional)

Steps:

  • Line a baking sheet with foil or parchment paper. Set aside.
  • Melt butter over medium heat in a non-stick skillet. Mix in the honey and cinnamon and then mix in the nuts.
  • Cook over medium heat for 5 minutes, stirring often until coated and toasted.
  • Pour nuts onto the lined baking sheet and quickly separate the nuts using a spatula or fork. Let cool (about 5 minutes) and enjoy!

  • Preheat oven to 350 degrees F (175 degrees C). Place pastry shells on a baking sheet.

1 teaspoon ground cinnamon, divided
4 cups salted mixed nuts
2 -3 tablespoons fine sugar

Steps:

  • Preheat oven to 325 degrees.
  • Mix honey, butter, and half of cinnamon in saucepan and heat to boiling. Cook for 2 minutes, stirring constantly.
  • In medium mixing bowl, pour honey mixture over nuts, stir well.
  • Pour mixture onto non-stick cookie sheet and spread evenly.
  • Bake for 10-15 minutes until nuts are lightly browned. Allow to cool.
  • Mix sugar and remaining cinnamon, and toss with nuts.

1 teaspoon coconut oil
1/2 - 3/4 cup unpasteurized wildflower honey
1/2 teaspoon salt

Steps:

  • Pre-heat oven to 350⁰F. Toss macadamia nuts with 1/2 teaspoon coconut oil to coat, then spread evenly on parchment lined baking sheet. Roast until well coloured, about 10 - 12 minutes. Remove to cool on wire rack.
  • Once cool enough to handle, add roasted macadamia nuts to food processor. Pulse 3 - 4 times to break up into smaller pieces then add half of your honey and pulse again 3 - 4 times to begin to breakdown further. Taste. Add salt if needed and the rest of your honey. Now blitz, full speed, as nut butter begins to smooth, about a minute. Check texture, add remaining coconut oil if needed.
