- Preheat the oven to 375°F/190°C. Lightly oil a roasting pan. Halve the tomatoes and place them, cut side up, in the dish. They should fit snugly with little or no space between them.
- Crush the garlic with a pinch of salt, then beat it with the honey, olive oil, and a good grinding of pepper. Spoon this sticky, garlicky mixture over the cherry tomatoes. Roast for about 30 minutes, until golden, juicy, and bubbling.

- Preheat oven to 350. Sprinkle breadcrumbs on a baking dish and toss with the olive oil. Sprinkle with salt and pepper.
- Bake stirring often until golden brown and crunchy, about 20 minutes. Warm the honey over low heat in small pan and add nutmeg.
- Cut tops off tomatoes and set them in a square cake pan. Drizzle 1/2 the honey over tomatoes and gently mound breadcrumbs on each one.
- Bake 15-20 minutes basting frequently with honey mix. Garnish with parsley.

- Heat oven to 200C/fan 180C/gas 6. Halve the tomatoes and put them, cut side up, in a single layer in a large ovenproof dish or baking tray. Tuck a sliver of garlic into each tomato half and scatter over thyme leaves. Drizzle with the oil, season generously, then bake for 30-40 mins or until the tomatoes are soft and juicy. Leave to cool. Can be roasted and chilled up to 3 days ahead. Bring to room temperature before serving.
- To serve, carefully lift the tomatoes onto a serving plate and pour over some of the juices from the roasting dish. Whisk together the honey, vinegar, mustard and a little seasoning to make a dressing, drizzle over the tomatoes and scatter with a few more thyme leaves.
