HONEY LEMON COUGH SYRUP
A natural cough syrup is as simple as this honey lemon thyme syrup recipe. Nothing will sooth your cough and throat better than this quick garden recipe.

Steps:
- Layer the thyme and lemon into the mason jar and cover with honey. Make sure the lemon is completely submerged under the honey.
- Remove any bubbles from within the jar using an air bubble remover or butter knife.
- Place the honey, lemon, thyme syrup in the refrigerator. The honey will naturally draw the liquid from the lemons creating a water-like texture.

HONEY-THYME SIMPLE SYRUP

Steps:
- In a small saucepan, combine the sugar, honey and water. Heat over medium high heat, stirring occasionally until the sugar is completely dissolved.
- Submerge the tied thyme in the still hot simple syrup and steep for 30 minutes.
- Remove the thyme and discard. Strain the syrup through a fine mesh sieve to remove any thyme leaves or other particles.
- Store in a glass jar in the refrigerator until cooled.
HONEY THYME BLUES
Steps:
- Place the gin, lemon juice, honey syrup, thyme leaves and 3 dashes of orange bitters into a shaker. Lightly muddle the thyme leaves, add large ice cubes and shake vigorously. Strain into a coupe glass, garnish with remaining thyme sprig and serve.
- In a small saucepan over medium heat, heat the honey and water until incorporated and the honey has dissolved. Cool to room temperature before using.
DIY: HONEY THYME COUGH SYRUP
Take one teaspoon of this homemade cough syrup as needed to relieve a cough or sore throat. Keeps well for about 2 months.

- Bring the water to a boil in a small saucepan, then remove from heat.
- Add the thyme, cover and let sit for 10 minutes or until cooled.
- Strain the mixture and whisk in the honey until dissolved. Store in a glass jar.
- The cough syrup with keep refrigerated for 2 months.
- To use, take 1-2 teaspoons, as needed.
