Two words: honey salmon! Sure, it takes a tiny bit of prep work, but once you marinate your salmon, you won't be able to go back. A simple mix of honey, soy sauce, garlic, and ginger coats and flavors your fish for 30 minutes before you throw it on the pan until the outside is perfectly crispy. Once that's done, you heat up and reduce some extra marinade to make a thick, to-die-for glaze to pour over your filet. Serve with your favorite veggies or rice and enjoy!

12 oz skinless salmon
1 tablespoon olive oil
4 cloves garlic, minced
2 teaspoons ginger, minced
½ teaspoon red pepper
1 tablespoon olive oil
⅓ cup less sodium soy sauce
⅓ cup honey

Steps:

  • Place salmon in a sealable bag or medium bowl.
  • In a small bowl or measuring cup, mix marinade ingredients.
  • Pour half of the marinade on the salmon. Save the other half for later.
  • Let the salmon marinate in the refrigerator for at least 30 minutes.
  • In a medium pan, heat oil. Add salmon to the pan, but discard the used marinade. Cook salmon on one side for about 2-3 minutes, then flip over and cook for an additional 1-2 minutes.
  • Remove salmon from pan. Pour in remaining marinade and reduce.
  • Serve the salmon with sauce and a side of veggies. We used broccoli.
  • Enjoy!

1/3 cup honey

2 tablespoons fresh lemon juice ((juice of 1/2 a lemon))
1.2 kg | 2 1/2 pound side of salmon
Sea salt (, to taste)
Cracked pepper (, to taste (optional))
Lemon slices ((to serve))
2 tablespoons fresh chopped parsley

Steps:

  • Position a rack in the middle of the oven. Preheat oven to 375°F | 190°C. Line a baking tray / sheet with a large piece of foil, big enough to fold over and seal to create a packet (or 2 long pieces of foil over lapping each other lengthways to create your salmon packet, depending on the width of you fillet).
  • In a small saucepan, melt the butter over low-medium heat. Add the honey, garlic and lemon, and whisk until the honey has melted through the butter and the mixture is well combined.
  • Place the salmon onto lined baking tray | sheet. Pour the butter/honey mixture over the salmon, and using a pastry brush or spoon, spread evenly over the salmon. Sprinkle with a good amount of salt (about 2 teaspoons) and cracked pepper. Fold the sides of the foil over the salmon to cover and completely seal the packet closed so the butter does not leak.
  • Bake until cooked through (about 15-18 minutes, depending on the thickness of your fish and your preference of doneness). Open the foil, being careful of any escaping steam, and grill / broil under the grill / broiler for 2-3 minutes on medium heat to caramelise the top. Garnish with parsley and serve immediately with lemon slices.

  • Mix together soy sauce, honey, ginger, garlic spring onions and lime juice - taste to your liking and season with black pepper.
  • Rinse the fish with clean water and gently pat dry with kitchen paper.
  • Pour the sauce over the fish in a large bowl, making sure the fillets are covered. Seal the bowl with cling film and leave to marinade in the fridge for 20 minutes.
  • Once marinaded, loosely wrap the fish in individual foil parcels with a couple of spoonfuls of the marinade, leaving a 1 inch gap in the top of the foil.
  • Place on a tray in a pre-heated oven at around 160°C for 15-20 minutes. Pour the remaining marinade into the parcels half way through cooking. Meanwhile, cook your rice or noodles.
  • Serve with vegetables such as broccoli, green beans or red peppers. Unwrap the parcels and use a flat utensil to lift the fish out and place onto your plate.

1 1/2 pound wild-caught salmon (sockeye or coho)
1 tablespoon oil
1 tablespoon EACH: grated ginger, minced garlic, AND rice vinegar
2 tablespoons soy sauce
5 tablespoons honey
1 tablespoon sesame oil
1/4 teaspoon red pepper flakes
1 teaspoon toasted sesame seeds
1 scallion, thinly sliced (greens only)

Steps:

  • Position a rack in the center of the oven and preheat the oven to 375ºF. Tear three pieces of foil that are slightly larger than the baking sheet, large enough to wrap the salmon in. Place one piece of foil on the baking sheet, followed by the second one going the other way (like a cross) and the last one going the same direction as the first. This will ensure none of the sauce leaks out.
  • In a saucepan over medium heat, heat the oil and add the ginger and garlic and allow to sizzle for just 30 seconds, add the rice vinegar and soy sauce and allow the them to reduce for 30 seconds to a minute. Stir in the honey and remove from heat. Add the sesame oil and red pepper flakes.
  • Place the salmon filet in the prepared foil, using a brush or spoon, brush the salmon with the sesame ginger sauce. Any remaining sauce can be poured around the salmon. Sprinkle with the toasted sesame seeds. Wrap the foil so all sides are properly closed so the sauce does not leak.
  • Bake salmon for 12-14 minutes or until firm (see note). Open the foil, spoon the sauce surrounding the salmon onto the fish, place under the broiler on for the 1-3 minutes, keeping an eye on the salmon so it does not burn. Remove from the oven, if your sauce is a little liquidy, allow the fish to rest for just 5 minutes. This will allow the sauce to thicken a bit. Serve with sliced scallions garnished on top.

1/2 cup lemon juice (about 8 condiment packets)

1/4 teaspoon black pepper
1/4 teaspoon paprika
1/4 teaspoon shrimp boil seasoning
1/4 cup honey mustard dressing (about one salad serving packet)

Steps:

  • Use doubled, heavy aluminum foil cut into large 2 foot rectangle.
  • Spray foil with cooking spray.
  • Dust foil with a pinch of each seasoning.
  • Place equal portions of the fish fillets on foil pan.
  • In a saucepan, melt margarine.
  • Add lemon juice, honey, salt, pepper, and spices.
  • Stir to blend well.
  • Fold the foil around the filets like a pan side to keep juices from draining.
  • Crimp corners of rectangle to seal.
  • Pour honey butter mixture over the fish, sprinkle with paprika, and shrimp seasoning.
  • Place on medium hot grill.
  • DO NOT TURN THE FILETS WHILE COOKING!
  • Cover with a second loose piece of foil to steam top of fish and grill for 8-10 minutes.
  • Remove foil and grill for 4-6 minutes more until top of fish is firm.
  • Puncture foil bottom with skewer or fork in two or three places to drain excess juices into the fire.
  • USE CAUTION AND AVOID FLARE UPS!
  • Check filet bottoms with spatula.
  • Grill for 2-4 minutes more to give the bottom of the filets a deep golden crust.
  • Fish should flake easily when done.
  • Remove from foil with non-stick spatula.
  • Serve filet slices with honey mustard dressing drizzle.

5 tbsp water
¼ cup honey
1½ tbsp rice vinegar

4 salmon fillets
4 cups broccoli florets
1½ cups carrots
2½ tbsp olive oil
salt and freshly ground black pepper
2 green onions

Steps:

  • Preheat oven to 400 degrees F.
  • Sauce:
  • In a small saucepan whisk together soy sauce, 3 tablespoons water, honey, rice vinegar, garlic, ginger and sesame oil. Season lightly with salt as needed.
  • Bring to a boil over medium-high heat. In a small bowl whisk together cornstarch with remaining 2 tablespoons of water until well combined.

  • Set aside ¼ cup of the sauce mixture then brush bottom sides of salmon fillets with a scant tablespoon of the sauce then rotate and place salmon over veggies. Brush tops of salmon with another scant tablespoon of the sauce mixture.
  • Pull sides of foil inward (the short length) and seal then roll edges up. Place packets on a baking sheet.
  • Bake in preheated oven for about 25 minutes until salmon has cooked through.
  • Serve with brown or white rice if desired and remaining sauce. Sprinkle with green onions.
