Sweet Honey-Glazed Snack Mix image

A retired home economist, Lucile created this recipe for a honey contest at the Kansas State Fair and won first prize! Its sweet, addictive flavor will surely have you begging for more. -Lucile Cline, Wichita, Kansas

Number Of Ingredients 5

6 cups Crispix
5 cups miniature pretzels
1-1/2 cups pecan halves
1/2 cup butter, cubed
1/2 cup honey

Steps:

  • In a large bowl, combine the Crispix, pretzels and pecans. In a small saucepan, combine butter and honey. Cook and stir until butter is melted and mixture is smooth. Pour over cereal mixture and mix well. , Transfer to two greased 15x10x1-in. baking pans. Bake at 325° for 15 minutes, stirring every 5 minutes. Cool on wire racks. Store in an airtight container.

Serve up a big bowl of this sweet and crispy snack and watch it disappear. If you like, substitute peanuts, cashews or even mixed nuts for the pecans.

8 cups Crispix
3 cups miniature pretzels
2 cups pecan halves
2/3 cup butter, cubed
1/2 cup honey

Steps:

  • In a large bowl, combine the cereal, pretzels and pecans; set aside. In a small saucepan, melt butter; stir in honey until well blended. Pour over cereal mixture and stir to coat. Spread into two greased 15x10x1-in. baking pans. Bake at 350° for 12-15 minutes or until mixture is lightly glazed, stirring occasionally. Cool in pan for 3 minutes; remove from pan and spread on waxed paper to cool completely. Store in an airtight container.

5 cups Cascadian Farm® organic honey nut O's cereal
1 cup pretzel sticks
1/4 cup creamy peanut butter
2 tablespoons butter
1 1/2 cups honey-roasted peanuts
1 1/2 cups dried banana chips
1 cup chocolate-covered raisins or raisins

Steps:

  • Heat oven to 350°F. In large bowl, mix cereal and pretzels.
  • In 1-quart saucepan, heat peanut butter and butter to boiling, stirring occasionally; pour over cereal mixture. Toss until evenly coated. Spread in ungreased 13x9-inch pan.
  • Bake 10 minutes, stirring occasionally. Stir in peanuts. Spread on waxed paper to cool, about 1 hour.
  • Stir in banana chips and raisins. Store in airtight container.

3 tablespoons butter or margarine
3 tablespoons packed brown sugar
3 tablespoons honey
2 teaspoons ground ginger
1/2 teaspoon salt
1 jar (6 to 7 oz) macadamia nuts
2 cups small pretzel twists
3/4 cup diced dried pineapple, papaya and mango mix (from 7-oz package)

Steps:

  • Heat oven to 350°F. Line 15x10x1-inch pan with foil. In 12-inch skillet, melt butter over medium heat. Stir in brown sugar, honey, ginger and salt. Cook about 2 minutes, stirring constantly, until bubbly.
  • Add remaining ingredients. Cook about 1 minute, stirring constantly, until all ingredients are coated. Spread mixture in thin layer in foil-lined pan.
  • Bake 10 to 12 minutes, stirring occasionally, until bubbly and lightly browned. On unlined cookie sheet, spread mixture in thin layer. Cool completely, about 30 minutes. Store in airtight container up to 2 weeks.

2 tablespoons sesame seed, toasted, if desired*

Steps:

  • Heat oven to 275°. Mix cereal, pretzels, popcorn, sesame sticks and nuts in ungreased jelly roll pan, 15 1/2x10 1/2x1 inch.

1 cup (2 sticks) unsalted butter
3 tablespoons honey
1/4 cup chopped fresh rosemary
2 teaspoons kosher salt
3 cups wheat square cereal
3 cups crisp rice square cereal
3 cups oat o's cereal
3 cups fish-shaped crackers, plain (not cheese)

Steps:

  • Preheat the oven to 300 degrees F and line a baking sheet with parchment paper.
  • Place the butter and honey in a small saucepan over medium heat and cook until the butter is melted, about 3 minutes. Stir in the rosemary and salt.
  • Combine the cereal and crackers in a large bowl. Pour over the melted butter and toss well to coat, then pour the snack mix onto the prepared baking sheet. Bake on the center rack, stirring once or twice during baking, until the snack mix is toasted and fragrant, about 40 minutes. Allow to cool before storing in an airtight container.

I got this from the "Eating for IBS" cookbook by Heather Van Vorous. I haven't tried it yet, but it's supposed to be "crunchy, sweet, and salty all at once." Sounds like a great way to calm your cravings! Make sure you see my note at the bottom about cooking time, since microwave powers vary.

3 tablespoons canola oil
1/4 cup honey
2 cups Corn Chex
2 cups Rice Chex
1 cup small pretzels

Steps:

  • In a small bowl, stir together oil and honey until well blended.
  • In a large bowl, stir together cereals and pretzels, top with honey mixture, and stir until well combined.
  • Microwave on high for 5-6 minutes, stirring well every 90 seconds, until it is cooked through and begins to look golden (it should no longer look "wet", but will still be slightly sticky!).
  • Cool thoroughly before serving.
  • Note: You might want to start nuking it for 45 seconds at a time and stirring in between; I've heard of some people having trouble with it burning otherwise.
  • It may take as little as 3 minutes, so watch carefully!
