Steps:
- To make chili honey, take the honey and place 4 chilies (I roasted them slightly first) and then place in a jar overnight.
- If you want, you can puree some of the chilies with the garlic for a extra kick.
- For the Brittle: Line 2 baking sheets with parchment or waxed paper.
- Combine the water and sugar in a large nonstick heavy-bottomed saucepan over medium-high heat.
- Stir to dissolve the sugar, 4 to 5 minutes.
- Add the corn syrup, honey, and salt, and stir constantly and slowly with a wooden spoon until the mixture comes to a gentle boil, about 2 minutes.
- Continue stirring until the mixture reaches 290°F on a candy thermometer.
- Remove the pan from the heat.
- Add the butter, garlic puree, and baking soda and stir until the butter is completely melted, about 1 minute.
- Pour the mixture onto the baking sheets, being careful as it is very hot, and spread it evenly with a rubber spatula.
- Let cool completely.
- Break the brittle into shards.

GRANDMA MYRNA'S HONEY-WALNUT BRITTLE
After several failed attempts at making homemade brittle, I finally got some sense and called my Grandma Myrna! She gave me this recipe for brittle made in the microwave, and I had instant success! The best tips she gave were to 'work quickly, have everything pre-measured out, and for goodness' sake, don't burn yourself!'

- Grease a large baking sheet with butter.
- Mix sugar and honey together in a large microwave-safe glass bowl; mixture will be very thick. Place in the microwave and cook on high for 1 minute. Stir, and cook 1 minute more. Stir mixture again, and cook until mixture boils and sugar is dissolved, an additional 30 seconds to 2 minutes.
- Stir walnuts into the bowl with the sugar mixture. Heat in the microwave another 3 to 4 minutes. Stir in butter, salt, cinnamon, and vanilla extract. Microwave until mixture is caramel in color, an additional 1 to 2 minutes.
- Carefully remove bowl from microwave, and quickly stir in baking soda until incorporated. Immediately pour mixture onto the buttered cookie sheet. Allow to cool until brittle is set, about 15 minutes. Break into pieces and store in an airtight container.

- Heat a large skillet over medium-high; add pepitas and cook, shaking skillet constantly, until darkened and beginning to pop, about 2 minutes. Transfer to a plate. Add sunflower seeds to skillet and cook, shaking constantly, until golden and beginning to pop, about 1 minute. Transfer to plate with pepitas; let cool.
- Reduce heat to medium. Add sesame seeds to skillet and cook, shaking constantly, until golden, about 1 minute. Transfer to plate; let cool completely. Add poppy seeds to plate; stir to combine.
- Coat a 12-by-17-inch rimmed baking sheet with cooking spray. In a medium saucepan, bring sugar, honey, and 1/3 cup water to a boil over high, stirring until sugar and honey are dissolved. Reduce heat to medium-high and boil, without stirring, until a candy thermometer registers 300 degrees. Remove from heat, add baking soda, and whisk vigorously just until incorporated, 2 to 3 seconds.
- Pour mixture onto prepared baking sheet (do not spread; it will flow out to fill sheet). Immediately sprinkle with seed mixture and flaky salt. Let cool completely. Break into pieces; serve. Brittle can be stored in an airtight container up to 1 week.
CASHEW BRITTLE MADE WITH HONEY

- 1. Boil the honey and water until the mixture reaches soft ball stage 234 degrees on a candy thermometer.
- 2. Add the nuts, stirring constantly while boiling mixture 10-12 minutes or until the mixture turns a golden color.
- 3. Remove pan from the heat. Add the vanilla, butter and baking soda. Mix well.
- 4. Pour brittle on a parchment paper lined cookie sheet. When cool break into pieces.

- Bring the water to a boil in a large, heavy saucepan over moderate heat.
- Stir in the sugar and corn syrup until dissolved.
- Cook to the hard-ball stage (250F, 121C) and add the almonds and salt.
- Cook, stirring occasionally, to the hard-crack stage (300F, 150C).
- Remove from the heat and stir in the butter, vanilla, and baking soda.

Steps:
- Preheat oven to 350.
- Take a cookie sheet with raised edges and cover it with foil.
- Place the crackers on the cookie sheet salt side down until it's covered.
- Heat butter and sugar together until the sugar is well dissolved into the butter.
- Pour the butter mixture evenly over the crackers and place in oven for five minutes.
- Remove the cookie sheet from the oven and pour the chocolate chips evenly over the butter mixture and crackers.
