LAVENDER AND HONEY SHORTBREAD
Delight guests with a buttery lavender shortbread. The subtle floral flavor of dried lavender lends the perfect accent to this traditional cookie There was a paragraph about Chef Cat Cora, being the spice amassador for the McCormick Gourmet Collections, and she suggested that this would be a special holiday treat!

Steps:
- Preheat oven to 300°F
- Place flour, confectioners' sugar and cornstarch in food processor; cover; pulse to blend.
- Add butter; pulse until coarse crumbs form.
- Add honey, lavender and vanilla; pulse until dough pulls away from side of bowl.
- Place dough in ungreased 9-inch tart pan with removable bottom.
- Place waxed paper over dough.
- Press to form a smooth even layer in bottom of tart pan.
- Remove waxed paper.
- Pierce dough with a fork, then score top with sharp knife into 12 wedges.
- Bake 25 to 30 minutes or until firm and just starting to brown around the edges. (Shortbread should be pale in color.)
- Place pan on wire rack.
- Cut through shortbread into wedges.
- While still warm but not hot, remove shortbread from pan to wire rack to cool.
- PREPARE VANILLA GLAZE:.
- Mix cup confectioners' sugar, milk and vanilla extract in small bowl until well blended and smooth.
- Drizzle vanilla glaze over cooled shortbread.
- OTHER VARIATION:.
- Sprinkle shortbread with confectioners' sugar.

This recipe comes from the 1995 cookbook Greek Cooking & makes, for me, an unusual, tasty shortbread.

- Preheat oven to 350 degrees F, then grease & flour several baking sheets.
- FOR THE SHORTBREAD ~ In a medium bowl whisk or sift flour, baking powder & baking soda together.
- In a large bowl combine oil, sugar, brandy, OJ & zest.
- Gradually add dry ingredients to liquid ingredients, combining well after each addition.
- Shape dough into ovals about 3 inches long, & place them well apart on prepared baking sheets.
- Bake about 20 minutes, then remove from oven & allow to cool on the baking sheets.
- (At this point, if freezing the shortbread, allow to cool COMPLETELY, then wrap well & freeze up to 2 months. When ready to serve from frozen, defrost thoroughly before coating with syrup, nuts & cinnamon.).
- FOR THE SYRUP ~ If you are not going to freeze the shortbread, in a saucepan, mix syrup ingredients together & bring to a boil.
- Boil rapidly for 5 minutes to thicken, then allow to cool.
- Dip cooled shortbread into the syrup & sprinkle with nuts & cinnamon, allowing to set slightly before serving.

- Beat the butter and sugar in a bowl with a wooden spoon until creamy.
- Next beat in the honey and the egg yolk.
- Add the cinnamon and flour,mix into soft dough.
- Take a teaspoon of dough and roll it into a ball.
- Then do the same to the other 29 cookies.
- Space out on a greased baking tray.
- Cook for 10 minutes at 175C.
- Clean up and wash up. DONE!!:D:)

- To prepare this melomakarona recipe start by making the syrup first. In a pot add all the ingredients for the syrup, besides the honey and bring to the boil. Boil for 3-4 minutes, until the sugar has dissolved and remove from the stove. Stir in the honey and set aside to cool completely.
- Prepare the dough for the melomakarona. In a bowl add the semolina, flour and baking powder and mix with a whisk to combine.
- In another large bowl add the orange juice, the cognac, the sugar and spices (nutmeg, cinnamon, clove, vanilla) and mix. Add the baking soda and whisk immediately for 5-10 seconds until the ingredients combine and the baking soda dissolves and starts to foam. Pour in the bowl the water, the oil, the orange zest and honey and whisk to combine.
- Now it’s time to combine the two mixtures. Add the mixed flour, semolina and baking powder (from step 2) in the bowl with the rest of the ingredients from step 3 and start kneading the dough for the melomakarona. Knead the dough for the melomakarona using your hands, until the ingredients combine and the dough is smooth and soft and slightly sticky. Be careful not to overwork the dough as they will become tough.
