Honey-Rosemary Chicken

2 tablespoons EVOO Extra Virgin Olive Oil
divided
Salt and black pepper
4 6-ounce pieces boneless
skinless chicken breast
1 large shallot
finely chopped
2 cloves garlic
finely chopped
3 sprigs rosemary
finely chopped
1/2 cup honey
1 rounded tablespoon Dijon mustard
Juice of 1 lemon
A handful of pine nuts or sliced almonds
toasted (optional)

Steps:

  • Heat 1 tablespoon EVOO, a turn of the pan, in a large skillet over medium-high heat
  • Season chicken with salt and pepper
  • When oil smokes, add chicken to the pan and cook 6 minutes on each side
  • Remove from pan and cover with foil
  • Reduce heat under pan to medium and add another tablespoon EVOO, a turn of the pan
  • Add shallots, garlic and rosemary to pan and cook 2-3 minutes
  • Add honey, stir in Dijon and lemon juice
  • Add chicken back to the pan and coat on all sides with the bubbling glaze
  • Turn off heat
  • Garnish with toasted nuts, if using
  • Serve with bitter greens salad or wilted spinach and Rice Pilaf

3 tablespoons butter
1 ½ tablespoons garlic powder
2 teaspoons rosemary
salt and ground black pepper to taste
½ cup honey
6 skinless chicken thighs

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Melt butter in a large saucepan over medium heat. Add garlic powder, rosemary, salt, and pepper; simmer until flavors combine, about 1 minute. Stir in honey; bring to a boil. Reduce heat to low. Dip chicken into sauce, 1 piece at a time, until coated. Place chicken on a 9x13-inch baking pan; pour remaining sauce over chicken.
  • Bake chicken in the preheated oven until no longer pink at the bone and the juices run clear, about 30 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Remove from oven; immediately turn over chicken with tongs to coat the top with sauce.

1 (3 -4 lb) chicken, cut into 8 to 10 pieces or 3 lbs chicken pieces
1 -1 1/2 cup all-purpose flour
1 tablespoon garlic powder
1 tablespoon salt (or less!)
1 tablespoon white pepper
1 cup buttermilk
peanut oil (for frying)
3/4 cup honey
1 tablespoon butter
1 sprig rosemary, chopped

Steps:

  • Wash chicken and pat dry.
  • Mix flour with garlic powder, salt, and pepper.
  • Dip chicken in seasoned flour, then buttermilk, then seasoned flour again. Set aside.
  • In a large skillet, heat oil to 325°F over medium-high heat. Add chicken, skin-side down, beginning with the dark meat. Keeping oil at 325°F, cook each side for 5 to 6 minutes covered and then 5 to 6 minutes uncovered, for a total cooking time of 20 to 24 minutes. Drain chicken on a wire rack.
  • To serve, drizzle Honey Rosemary Glaze over chicken, if desired.
  • For Honey Rosemary Glaze: In a small saucepan, combine honey, butter, and rosemary. Cook over low heat on stovetop until butter has melted. Stir to combine.
  • Chef's note: Use more flour to offset salt. Also, be sure you only "warm" honey--don't let it get hot enough to boil! I used chicken tenders (see photo).

1/4 cup honey
1/4 cup balsamic vinegar
1/4 cup minced fresh rosemary
2 tablespoons olive oil
6 bone-in skinless chicken breast halves (7 ounces each)
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a small bowl, combine the honey, vinegar, rosemary and oil. Pour half of the marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate for 2 hours. Cover and refrigerate for 2 hours. Cover and refrigerate remaining marinade., Drain and discard marinade from chicken. Place chicken bone side down in a 13-in. x 9-in. baking pan. Sprinkle with salt and pepper., Bake, uncovered, at 350° for 55-65 minutes or until a thermometer reaches 170°, basting occasionally with reserved marinade.

1 tablespoon olive oil
3 tablespoons Dijon mustard
3 tablespoons honey
3 cloves garlic (finely minced)
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh rosemary (coarsely chopped)
2 pounds boneless skinless chicken breasts or thighs
Lemon wedges for serving

Steps:

  • Whisk together the olive oil, mustard, honey, garlic, salt, pepper, and rosemary. Place the chicken in a gallon-size ziploc bag and pour in the marinade. The mixture will be pretty thick; that's ok. Press out excess air, seal the bag and then gently mash the bag with your hands until the marinade mixture evenly coats the chicken.
  • Refrigerate for at least one hour or up to 24 hours.
  • Preheat an outdoor grill to about 350 degrees and cook the chicken for 6-7 minutes per side or until the internal temperature registers 165 degrees F on an instant-read thermometer. Tent with foil and let rest for 5 minutes.
  • Drizzle fresh lemon juice over the chicken and serve (or serve the lemon wedges alongside).

1/3 cup honey
1/4 cup olive oil
2 tablespoons coarse grain mustard
1 1/2 teaspoons bottled minced garlic (3 cloves)
1 tablespoon snipped fresh rosemary
2 teaspoons lemon juice
1/2 teaspoon salt
1/4 teaspoon ground black pepper
4 boneless skinless chicken breasts

Steps:

  • For marinade, in a small bowl combine honey, olive oil, mustard, garlic, rosemary, lemon juice, salt and pepper.
  • Place chicken in a resealable plastic bag.
  • Pour marinade over chicken.
  • Seal bag; turn to coat chicken.
  • Marinate in the refrigerator for at least 4 hours or up to 24 hours, turning bag occasionally.
  • Drain chicken, reserving marinade.
  • Place chicken on grill rack.
  • Cover and gril 15 to 18 minutes or until chicken is no longer pink, brushing once with reserved marinade halfway through grilling.
  • Discard any remaining marinade.

8 cherry tomatoes
1 small zucchini, cut into 1-inch pieces
1/2 cup cubed fresh pineapple

Steps:

  • In a small bowl, combine the first four ingredients. Pour 3 tablespoons marinade into a large resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate for at least 30 minutes. Cover and refrigerate remaining marinade., Drain and discard marinade from chicken. On four metal or soaked wooden skewers, alternately thread the chicken, vegetables and pineapple., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill kabobs, covered, over medium heat or broil 4 in. from the heat for 6-8 minutes or until chicken is no longer pink, turning and basting frequently with reserved marinade.

A wonderful way to relive your childhood with juicy chicken and a sweet and tangy honey-mustard sauce.

2-3 potatoes (depending on size of pan), cut into thin wedges or sliced
2 chicken breasts, cut into thick strips (or use tenderloins)
2 medium onions, finely diced
A small bunch of fresh rosemary
Olive oil
Salt & pepper
For the sauce
2 tbsp. Dijon mustard
3 tbsp. grainy mustard
Juice of a large lemon
1 tbsp. olive oil
2-3 tbsp. honey
2 cloves garlic, minced
Salt & pepper

Steps:

  • Preheat oven to 390F
  • In an oven-safe skillet, cook the onions in a couple of tablespoons of olive oil over medium-high heat on the stove until softened and starting to brown, about 10 min.
  • Take off the heat and arrange your potato slices on top in an even layer. Drizzle with olive oil and sprinkle with salt & pepper. Cover loosely with foil and bake in the oven for 15-20 minutes, until softened.
  • Meanwhile, mix all the sauce ingredients together in a bowl or jar . Taste and adjust according to your preference; if you like more acidity add more lemon, more sweetness add more honey etc.
  • Take the pan out of the oven and arrange your raw chicken on top of the potatoes in an even layer. Pour the prepared sauce on top, making sure everything is coated. Throw a few sprigs of rosemary around the chicken, cover again with foil and bake for 20 minutes.
  • After 20 minutes, remove the foil and turn on your oven's broiler on high and bake for a further 15 minutes until nicely browned. Serve immediately.
