2 cups raw walnuts
1 ½ tablespoons butter
¼ cup honey
½ teaspoon cayenne pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Add walnuts to a heat-resistant bowl.
  • Melt butter in a nonstick skillet over medium heat. Mix in honey and cayenne pepper and pour mixture over walnuts in the bowl. Mix well. Spread coated walnuts onto the prepared baking sheet and quickly separate nuts using a spatula or fork.
  • Bake in the preheated oven for 10 minutes. Stir and continue baking until golden brown, 5 to 10 minutes more.

2 tablespoons extra-virgin olive oil or melted butter if not vegan
1/4 teaspoon ground coriander
1/2 teaspoon ground cumin
1 1/2 teaspoons smoked paprika
1/2 teaspoon red chili flakes
1 tablespoon fresh thyme, minced (or 1 teaspoon dried thyme)
1 teaspoon fresh rosemary, minced (or 1/4 teaspoon dried rosemary, chopped)

Steps:

  • Preheat oven to 350°F.
  • Place walnuts in a large bowl and toss walnuts with olive oil.
  • Add all spices in the bowl and toss well.
  • Lay the spiced walnuts on a baking sheet in a single layer. Optional: use aluminum foil or parchment paper for easy clean-up. Bake for 5-10 minutes until golden brown. Enjoy!
  • Heat olive oil or melt 2 tablespoons butter in a large, heavy skillet over medium heat, 2-3 minutes.

1/2 cup honey
1/4 cup raw sugar
1/2 teaspoon sea salt
1/4 teaspoon cayenne pepper
1 cinnamon stick
1 cup unbroken walnut halves

Steps:

  • Combine honey, sugar, salt, cayenne and cinnamon in a small pot over medium heat,.
  • Stir once then cook 3 minutes till sugar dissolved.
  • Add walnuts, stir to coat.
  • Simmer 5 - 7 minutes or until syrup is lightly browned.
  • Drain through a coarse sieve, discard cinnamon stick.
  • Place walnuts on a wire rack over a 19 X 29 cms rectangular slice pan.
  • Cook in moderate oven 180 C for about 8 minutes or until nuts have darkened slightly.
  • Remove from oven, cool on wire rack.
  • Nuts will crisp as they cool.

½ teaspoon kosher salt
3 tablespoons honey
3 tablespoons water
1 tablespoon almond oil

Steps:

  • Spread almonds in a single layer on a baking sheet and place in a cold oven.
  • Turn oven on to 350 degrees F (175 degrees C). Bake almonds, stirring occasionally, until light tan and fragrant, 12 to 15 minutes. The nuts will continue to cook after removing from oven.
  • Meanwhile, mix sugar and salt together in a small bowl; sprinkle about 1 tablespoon sugar mixture into a large bowl.
  • Stir honey, water, and almond oil together in a saucepan; bring to a boil. Add almonds; cook and stir until almonds have absorbed all the liquid, about 5 minutes.

  • Preheat a large frying pan over med/high heat. Add butter, walnuts, salt and honey. Stirring consistently, cook until nuts have toasted and honey has caramelized, about 3 minutes.
