3/4 cup old fashioned oats
3/4 cup whole wheat flour
3/4 cup all-purpose flour
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground coriander
3/4 teaspoon salt
1/2 cup plus 2 tablespoons honey
1/2 cup buttermilk
1/2 cup canola oil
2 large eggs

Steps:

  • Preheat the oven to 375°. Coat a 12-cup muffin pan with canola or veggie oil spray, you can even use butter if you like. In a large bowl, mix the oats with the whole-wheat flour, all-purpose flour, baking powder, baking soda, cinnamon, coriander and salt.
  • In another bowl, whisk the honey with the buttermilk, canola oil and eggs. Pour the honey mixture into the dry ingredients; mix just until combined.
  • Spoon the batter into the prepared muffin cups and bake for about 18 minutes, until they're golden and a toothpick inserted into the center of the muffins comes out clean. Let the muffins cool in the pan for about 5 minutes, then transfer them to a rack. Serve warm or at room temperature.

1 cup rolled oats
2 tablespoons honey
2 tablespoons vegetable oil
1 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine buttermilk and oats in a small saucepan; heat just until warm; set aside.
  • Grease muffin cups or line with paper muffin liners.
  • In a large bowl, combine honey and vegetable oil with oat mixture.
  • Combine flour, baking powder, baking soda and salt; stir into wet mixture. Pour batter into prepared muffin cups.
  • Bake in preheated oven until lightly browned, about 30 minutes.
  • Serve warm.

Steps:

  • Add milk, oil, egg and honey to combined remaining ingredients, mixing just until dry ingredients are moistened.
  • Spray 12 muffins tins with cooking spray, fill 2/3 full.
  • Bake in preheated 400 degree oven for 15-18 minutes or until golden brown.

  • Using a food processor grind 3 cups and 2tbsp of old fashioned rolled oats into fine oat flour. You want 3 cups of oat flour, so if you end up short, grind more oats into flour. You want to grind for at least two minutes so that your oat flour is very fine. (or you can purchase fine oat flour.) Note - don't over grind so that that oat flour is extremely hot.
  • Add baking soda and baking powder to oat flour in the processor. Process or hand mix for 10 seconds.
