YODER'S HONEY NUT SWIRL COFFEECAKE



Yoder's Honey Nut Swirl Coffeecake image

Number Of Ingredients 11

1 cup milk
1/2 cup shortening
1/2 cup sugar
2 teaspoons salt
2 packages dry yeast
6 flour
1 /2 cup honey
1/4 cup butter
3 walnuts (chopped )
2 teaspoons cinnamon
1 teaspoon vanilla

Steps:

  • Scald milk.
  • Stir in shortening, sugar, and salt. Cool to lukewarm.
  • Dissolve yeast in water.
  • Add yeast, eggs, and 2 cups of flour to milk mixture. Beat until smooth.
  • Gradually add enough flour to make a soft dough.
  • Turn out on floured surface. Let rise 10 minutes. Place in greased bowl, cover, and let rise in warm place until doubled.
  • Punch down and let rise again. Divide in half, roll each in an 18 X 12 rectangle. Spread with honey-nut filling, roll-up, and roll into a coil, and let rise and bake at 350 for 45 minutes.

1 sheet frozen puff pastry, thawed
1 cup finely chopped walnuts
1 cup finely chopped pistachios
3 tablespoons brown sugar
2 tablespoons butter, softened
2 tablespoons honey
1 teaspoon ground cinnamon
1/4 teaspoon salt
2 tablespoons heavy whipping cream
2 tablespoons turbinado (washed raw) sugar or sugar

Steps:

  • On a lightly floured surface, unfold puff pastry. Roll into a 12x9-in. rectangle., In a small bowl, combine the walnuts, pistachios, brown sugar, butter, honey, cinnamon and salt. Spread over pastry to within 1/2 in. of edges. Roll up jelly-roll style, starting with a long side. Cut into 1/2-in. slices., Place 2 in. apart on parchment-lined baking sheets. Brush with cream and sprinkle with sugar. Bake at 375° for 10-12 minutes or until lightly browned. Remove to wire racks.

1/4 cup walnuts
1/4 cup almonds
1/4 cup pine nuts
6 figs, fresh or dried, cut into quarters
6 dates, pitted and chopped
1/2 cup honey
1/4 cup water
1 lemon, juiced
1 cinnamon stick
2 cups Greek yogurt*
Mint leaves for garnish

Steps:

  • Toast the nuts in a saute pan over medium heat until they become fragrant. Put the nuts onto a plate and set aside; when cool enough to handle, chop them roughly. In a small saucepan over medium heat, add the figs, dates, honey, water, lemon juice, and cinnamon stick. Cook for about 10 minutes until fruit is soft. Set aside and let it cool slightly; remove the cinnamon stick. Place the yogurt in a big bowl. Spoon the warm fruit onto the yogurt and gently swirl the fruit through the yogurt. Sprinkle on the nuts and garnish with mint leaves. Serve immediately.;

Return the pot to the heat but be mindful to swirl the kernels around every minute or so. When the first kernel pops cover the pot with a tight-fitting lid. Continue to cook and swirl the popcorn until the last kernel has popped.

  • In a small saucepan, heat coconut oil just until melted. Remove from heat and whisk in honey and vanilla to a smooth, caramel-like consistency. Set aside to cool.
  • To the bowl of a food processor add 1/2 cup shredded coconut, walnuts, pecans, cinnamon, sugar and salt. Drain raisins and add to coconut mixture. Pulse until very finely chopped. Pour coconut oil mixture over and process until nearly smooth - a consistency somewhere between creamy and chunky peanut butter. Transfer mixture to medium bowl.
