HONEY OATMEAL BREAD (ABM)
This bread recipe came off the back of the bread flour. I found it to be so good, just a "tad sweet', and its great toasted. Cook time is what is suggested on your ABM. For a softer crust, butter the crust of the bread and put in a plastic bag as soon as it comes out of the machine. This recipe makes a 1 1/2 pound loaf.

This is one of my favorite ABM loaves. It is substantial without being heavy. I always end up leaving out the nuts though. Cooking time will vary with ABM model.

Steps:
- In a large bowl, combine the oats, honey, butter and salt.
- Add the 2 cups boiling water, and stir well.
- Let mixture set until cooled, then add 2 cups of the flour. Stir well.
- Dissolve the yeast in the 1/4 cup warm water, and let set for 10 minutes.
- Add yeast to the oat mixture, mixing until combined.
- Stir in the 1 cup nuts.
- Work in the remaining 2 cups flour. Knead for 8-10 minutes.
- Place dough in a large greased bowl, cover and let rise for 1 1/2 hours.
- Punch dough down and shape into two loaves. Place dough into two 8 1/2" x 4 1/2" greased loaf pans.
- Cover and let rise 1 hour.
- Bake at 375 degrees for 40-45 minutes.

DOUG'S HONEY NUT OATMEAL BREAD - BREADMACHINE
This is an automatic bread maker recipe. The bread is my son's favourite. It is great for sandwiches, toast, and bread pudding.

- 1. Put ingredients except walnuts in breadmaker according to the manufacturers instructions. This makes a 1 1/2 lb loaf. Use whole wheat setting.
- 2. At the beep add the walnuts.
- 3. After baking remove from pan and cool before slicing.
- 4. Note:I usually use the dough cycle and form the bread into one medium loaf and a couple of little loaves. Let them rise until doubled in size (about 30 - 40 minutes). Then bake them in the oven at 375 degrees F. for 45 minutes for the larger loaf and 30 minutes for the little ones. I prefer to test them with an instant-read thermometer. Internal temperature should be 200 degrees F.
HONEY OATMEAL BREAD II
This is a fine textured bread if the oatmeal is allowed to soak for the full hour.

Steps:
- In a large mixing bowl, combine boiling water, oats, 1/2 cup honey, butter and salt. Let stand for 1 hour.
- In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
- Pour the yeast mixture into the oat mixture. Add 2 cups of flour; mix well. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 20 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
- Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into two equal pieces and form into loaves. Place the loaves into two lightly greased 9x5 inch loaf pans. Cover the loaves with a damp cloth and let rise until doubled in volume, about 40 minutes.
- Preheat an oven to 350 degrees F (175 degrees C).
- Bake in the preheated oven for about 30 minutes or until the top is golden brown and the bottom of the loaf sounds hollow when tapped. Remove loaves from pans, brush tops of loaves with 2 tablespoons honey and sprinkle with oats.
