HONEY-NUT CHRISTMAS COOKIES

- Place flour in a large bowl. Cut in cold butter and cream cheese until mixture resembles coarse crumbs. Shape into two disks; wrap in plastic. Refrigerate for 2 hours or until easy to handle., Preheat oven to 325°. Place sugar and 1 cup pecans in a food processor; cover and process until pecans are finely chopped. Transfer to a small bowl; stir in 1/3 cup honey, butter and cinnamon., On a lightly floured surface, roll one portion of dough to 1/8-in. thickness. Cut with a floured 2-in. round cookie cutter. Place a teaspoonful of filling on the center of half of the circles; top with remaining circles. Press edges with a fork to seal. Repeat with remaining dough., Transfer to greased baking sheets. Brush with remaining honey and sprinkle with remaining pecans. Bake 18-22 minutes or until golden brown. Remove to wire racks to cool.

This is a recipe my mother got from her mother. It's a family favorite at Christmas, and very easy to make. It has few ingredients, so the flavor of the honey really comes through.

- Preheat oven to 300 degrees F (150 degrees C).
- Combine butter, honey, and vanilla extract in a bowl; beat with an electric mixer until creamy. Mix in flour 1/2 cup at a time. Stir walnuts into the dough.
- Form dough into 1-inch balls. Arrange on an ungreased baking sheet.
- Bake in the preheated oven until very light golden, 30 to 45 minutes. Cool briefly, about 5 minutes.
- Pour confectioner's sugar into a shallow bowl. Roll warm cookies in confectioners' sugar to coat.

LEBKUCHEN (GERMAN CHRISTMAS HONEY COOKIES)
This recipe is from an OLD betty crocker cookbook and is my absolute favorite Christmas cookie. My MIL sends a batch every year and is one of my favorite things of the season. DO NOT overbake these or they will become so hard that you might need to have dental work done (lol) If the cookies are too hard she suggests placing them in an airtight container with an apple slice. I did not include chilling time in the recipe.

Steps:
- Mix honey and molasses and bring to a boil. Remove from heat and cool completely.
- Stir in brown sugar, egg, lemon juice and lemon rind.
- Sift together flour, baking soda and spices, then stir into the honey-molasses mix.
- Mix in the citron and chopped nuts, place the dough in the refrigerator and chill overnight.
- Roll out a small amount of dough at a time to 1/4 inch thick, keeping the rest in the fridge. You can either cut out oblong shapes about 1 1/2" x 2 1/2" or just cut out circle shapes about 2" in diameter.
- Place on a GREASED baking sheet about 1" apart.
- Place 3 almonds on top of each cookie in a flower shape, and place in a 400 deg oven for 10-12 min or until no imprint remains when touched lightly.
- While cookies bake, make glaze by boiling the water and sugar to 230 degrees - until it just barely begins to thread.
- Remove from heat and stir in confectioners sugar.
- Brush the hot glaze lightly over the cookies (if it gets grainy reheat slightly with a little water to thin again).

- To prepare this melomakarona recipe start by making the syrup first. In a pot add all the ingredients for the syrup, besides the honey and bring to the boil. Boil for 3-4 minutes, until the sugar has dissolved and remove from the stove. Stir in the honey and set aside to cool completely.
- Prepare the dough for the melomakarona. In a bowl add the semolina, flour and baking powder and mix with a whisk to combine.
- In another large bowl add the orange juice, the cognac, the sugar and spices (nutmeg, cinnamon, clove, vanilla) and mix. Add the baking soda and whisk immediately for 5-10 seconds until the ingredients combine and the baking soda dissolves and starts to foam. Pour in the bowl the water, the oil, the orange zest and honey and whisk to combine.
- Now it’s time to combine the two mixtures. Add the mixed flour, semolina and baking powder (from step 2) in the bowl with the rest of the ingredients from step 3 and start kneading the dough for the melomakarona. Knead the dough for the melomakarona using your hands, until the ingredients combine and the dough is smooth and soft and slightly sticky. Be careful not to overwork the dough as they will become tough.
