HONEY NUT CHICKEN STRIPS
This recipe evolved out of a need one evening. My son wanted chicken strips for dinner, but, alas, I didn't have any on hand. So, to the pantry I went and discovered I did indeed have the ingredients to put together a yummy sweet & salty coating for chicken breasts. Voila, these honey nut chicken strips were born!

Steps:
- 1. Preheat the oven to 375 degrees and line a baking sheet with aluminum foil. Spray the foil with cooking spray and set aside. Crush the cereal and french fried onions together. Cut the chicken breasts into strips, making sure to keep the strips as uniform as possible in size. I actually prefer to do this when the chicken is slightly frozen. After cutting, and for easy clean-up, I lay the chicken strips on a piece of aluminum foil.
- 2. Season the chicken strips with salt and pepper. Pour 2/3 cup of honey mustard into a bowl. Using a pastry brush, brush each chicken strip with the honey mustard. Discard any remaining honey mustard after brushing the raw chicken. Pour the crushed cereal and french fried onions onto a plate, then roll each strip in the crumbs coating evenly on all sides.
- 3. Place the strips onto the prepared baking sheet and drizzle with melted butter/margarine. Sprinkle with paprika for a little color. Place the strips into the oven.
- 4. Bake at 375 degrees for 19-20 minutes or until golden and crispy. Serve with additional honey mustard on the side for dipping. Yield: 12-14 strips Cook's note: For appetizers, cut into bite sized chunks and bake for 14-15 minutes. Serve with toothpicks for easy dipping.

Steps:
- Place the pecans in the bowl of a food processor and pulse until finely chopped (go easy -- you don't want a paste). Add the panko, 1¼ teaspoon salt, sugar and cayenne pepper and pulse a few more times to combine. The panko should be broken down slightly but not finely ground.
- Set up three large shallow dishes in an assembly line. Place the flour in the first dish; beat the eggs in the second dish; and place the pecan/panko mixture in the third dish. Line a baking sheet with aluminum foil to hold the breaded tenders, and place at the end of the assembly line.
- Season the chicken tenders with the remaining teaspoon salt. Working with one tender at a time: dredge first in the flour, shaking off any excess; dip in the egg to coat evenly; and then dredge in the pecan/panko mixture, pressing down to make the coating adhere. Try to use one hand for the dry breading (the flour and pecan/panko mixture) and one hand for the wet (the eggs) -- otherwise, your hands will end up a mess. Place the breaded tender on the prepared baking sheet and repeat with remaining tenders.
- Heat about ⅛-inch of oil in a large skillet over medium heat. While the oil heats up, line another baking sheet with paper towels (this is for the finished tenders - the paper towels will absorb any excess oil).
- When the oil starts to shimmer, add half of the chicken tenders and cook for a few minutes on the first side until golden brown. Using tongs, flip the tenders and cook until the second side is also golden, 1-2 minutes Adjust the heat as necessary so the tenders don't burn. Transfer the cooked tenders to the prepared baking sheet. Discard the oil, wipe the skillet clean with a paper towel, and then repeat with the remaining tenders.
- Make the sauce by combining the mayonnaise, mustard and honey in a small bowl. Serve alongside chicken tenders.
- Freezer-Friendly Instructions: The cooked chicken tenders can be frozen for up to 3 months. No need to defrost; put the chicken tenders on a wire rack on top of a rimmed baking sheet and bake in a 350°F oven until heated through and crisp, about 25 minutes. (Flip the chicken halfway through baking.)

- Place the chicken, olive oil, mustard, white wine, garlic, and dried thyme in a large zipped-top bagger container. Seal shut, give it a shake to combine, and refrigerate for at least 4 hours and up to 12 hours.
- Combine the walnuts, flour, salt, and pepper together in a shallow dish such as a 9×9 inch baking pan or a pie dish. Remove the chicken, shake off a little excess marinade and dip both sides of the chicken in the walnut mixture. Coat it really well so there’s lots of walnut coating on each.
- Heat a couple Tablespoons of olive oil in an oven-safe skillet* over medium heat. Add the chicken and sear for 2 minutes, 1 minute on each side. Transfer skillet to the oven and bake, covered loosely with aluminum foil, for 15-20 minutes or until the chicken is fully cooked through. (Chicken is considered done when an instant read thermometer reads the center of the thickest part as at least 165°F (74°C).)

- Bisquick Chicken Tenders. I had to start with a classic, and this version is insanely easy. Bisquick speeds things up like you wouldn’t believe and leaves these tenders crisp, buttery, and impossible to resist.
- Crispy Oven Chicken Tenders. As good as those Bisquick tenders are, they have more of a battered texture once baked. So, if you like an audible crunch, you’ll have to try this fantastic panko and cornflake recipe.
- 15- Minute Honey Garlic Chicken. For this recipe, you’ll make a delicious sweet and garlicky sauce that thickens to perfection into a glaze that coats every ounce of these chicken tenderloins.
- Crispy Baked Buffalo Chicken Tenders. The secret to making these chicken tenders super tasty and wonderfully crunchy is to dredge the meat in hot sauce before adding the breadcrumbs.
- Cracker Barrel Chicken Tenders. I have to admit that I was a little surprised Cracker Barrel tenders don’t have a thick layer of something deep-fried on the outside.
- Chicken Tenders with Bacon Jalapeño Sauce. This recipe had me at ‘bacon,’ but that jalapeńo sauce tipped it over the edge. So how could I not make it immediately?
- Garlic Parmesan Chicken Tenders. Since they’re so much bigger, chicken breasts are usually cheaper than tenders. So, if you’re feeding a crowd, it might be worth buying breasts and just cutting them to size.
- Dorito Chicken Tenders. There are cheesy chips, and then there are Doritos. I don’t think you can compare generic brands to Doritos and all that unreal flavor they pack onto those chips.
- Air Fryer Chicken Tenders. Air Fryers work by rushing hot air around your food, like a convection oven. The intense heat and small basket are how the food turns so crispy without a ton of oil.
- Everything Bagel Baked Chicken Tenders. I just checked, and I have three unopened jars of Trader Joe’s everything bagel seasoning and two open. For me, it’s kind of like ketchup.
