NO-BAKE HONEY NUT CHEERIOS™ BITES

Steps:
- Line tray with cooking parchment paper. In food processor, place all ingredients. Cover and process in 1-second bursts until finely chopped, about 15 to 20 bursts; then process until well blended and mixture comes together. Transfer to medium bowl.
- Coat hands lightly with water; use hands to blend mixture completely. Scoop out by measuring tablespoonfuls, and shape each portion into a ball; place on tray.
- Refrigerate about 1 hour or until firm. Store in tightly covered container in refrigerator up to 3 days.

HONEY & NUT CHEERIOS SQUARES
This is a very simple, yet very tasty, snack bar recipe. I like to use half regular variety Cheerios and half Multigrain Cheerios, but you can use any variety you like. You might also try mixing in some dried fruit or chocolate chips, but I prefer them as is. Especially if you use Multigrain Cheerios, this is a healthier bar than Rice Crispy treats. My whole family likes them, and they are great to make with kids. (Obviously, supervision is needed for the stove with younger children, but an older child can make these themselves.) Prep time includes cooling time.

Steps:
- Measure honey and sugar into a large saucepan.
- Heat just to boiling.
- Add peanut butter and stir until melted.
- Remove from heat and stir in Cheerios, mixing thoroughly to coat evenly.
- Fold into a buttered 13x9 pan.
- Allow to cool one minute.
- With slightly wet hands, gently press mixture down so that bars will be compact and hold their shape.
- Allow to cool thoroughly, about 15 minutes.
- Cut into squares.

- In a microwave safe bowl add the honey, coconut oil and brown sugar. Microwave the mixture on 30 seconds interval, stirring until melted and smooth. This took me about 1 minute. Once the honey mixture is melted and easily pourable stir in the baking soda, salt and vanilla. Pour the honey mixture over the cheerios and toss well. Pour the cheerios out into the prepared baking dish. Bake for 25-35 minutes or until the top of the bars are golden brown. This mixture may bubble up a bit, but this is fine.
- Remove from the oven and allow to cool completely, about 2-4 hours before cutting into bars. Once cool cut in bars and wrap in plastic wrap for easy snacking. If bars end up crumbling use as you would cereal or granola.
