- Sprinkle tuna with pepper and salt. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill fish, covered, over medium heat or broil 4 in. from the heat for 3-5 minutes on each side for medium-rare or until slightly pink in the center., Meanwhile, in a small saucepan, combine the remaining ingredients until smooth. Bring to a boil; cook and stir for 1 minute or until thickened. Serve with fish.

- Put the onion, lemon zest, juice and 1 tbsp oil into a small bowl, add salt and pepper to taste, then leave to soak for 5 mins until the onion has softened a little. Pour the hot stock over the couscous in a large bowl, cover with cling film and leave for 10 mins until the stock has been absorbed.
- Season the tuna steaks, brush with oil, then pat the mustard powder over both sides. Once the couscous is ready, add the parsley and capers to the onions, stir well, then mix into the couscous with a fork. Heat a griddle pan and sear the tuna for 1 min on each side until medium-rare. Serve the tuna with the couscous and lemon wedges on the side.

HONEY MUSTARD TUNA STEAKS
Steps:
- 1. Mix all the ingredients together except the tuna. Place in a baggie or flat bowl and then add the tuna. Let marinate 30 minutes. Turning the tuna a few times.
- 2. Remove the tuna from the marinade. Place the marinade in a saucepan and bring to a boil and let reduce to 1/4 cup. Strain through fine mesh strainer.
- 3. Sear the tuna in a cast iron pan or grill in some oil. Sear about 3 minutes each side then edges. Remove from pan slice drizzle the marinade reduction over and garnish with the pea shoots
TUNA STEAKS W HONEY MUSTARD & MASHED TARO

Steps:
- 1. In a baking dish whisk 1/4 cup of the Dijon mustard with 2 Tbsp of olive oil add some salt and pepper and 1/4 cup cilantro. Add the tuna steaks and and mix well and set them in the fridge to marinate at least 30 minutes.
- 2. In a saucepan add the taro and cover it with water and salt and bring to boil. Cook about 20 minutes or until taro is tender. Drain. Mash the taro and mix it with butter and heavy cream. Adjust the cream depending on consistency. Season with salt and pepper.
- 3. In a bowl whisk 1/4 cup olive oil with 2 tbsp. each Dijon mustard and honey. Add the remaining cilantro and season with salt and pepper.
- 4. Remove the tuna from the marinade and brush the marinade off. Place some oil in a large skillet and sear the tuna until desired doneness.
- 5. Serve the tuna sliced on top of the mashed taro and drizzled with the honey mustard sauce.
HONEY MUSTARD GRILLED SALMON OR TUNA STEAKS
Salmon is my favorite "meat" and maybe my favorite food on earth. Since it's also good for you, I try to eat it at least a couple times a week. Grilled with this marinade is one of my favorite ways. If you have more fish and more than 3 people to feed, increase the amount of marinade. The preparation time is basically the marination time.

- Combine the honey mustard, soy sauce, vinegar and oil in a large ziplock plastic bag.
- Add the salmon and seal the bag, turning to make sure pieces are coated on all sides.

- Combine the first 5 ingredients in a jar or covered container; shake to mix well.
- Put tuna in a food storage bag; add about 4 tablespoons of the mustard mixture.
- Seal the bag and let marinate for about 20 minutes.
- Brush the grill with olive oil and heat.
- Remove the tuna from the marinade and pour the marinade in a small saucepan.
- Bring marinade to a full boil; remove from heat and set aside.
- Grill the tuna over high heat for about 2 to 3 minutes on each side, or until done as desired.

- In a baking dish, whisk 1/4 cup of the mustard with 2 tablespoons of the oil and a pinch each of salt and pepper. Stir in 1/4 cup of the cilantro. Add the tuna and turn to coat. Cover and refrigerate for 30 minutes.
- In a large saucepan, cover the taro with water and bring to a boil. Add a large pinch of salt and simmer over moderate heat until very tender, about 25 minutes. Drain well and return to the saucepan. Add the cream, milk and butter and mash. Season generously with salt and pepper; keep warm.

Grill over high heat, turning once, until lightly charred outside and rare within, 2 to 3 minutes per side. Transfer the tuna to a platter and garnish with cilantro. Serve the tuna with the mashed taro, passing the mustard dressing at the table.
