Honey Mustard Pasta Salad image

This is a one dish meal that will work with ham or chicken, and can be expanded. Broccoli could also be used. Cooking is a creative sport.

1 cup dry pasta (I like spiral)
1 cup cooked ham, diced (OR cooked chicken)
1/2 cup diced tomato
5 tablespoons honey
3 tablespoons mustard (not the bright yellow stuff)
2 tablespoons wine vinegar
1/2 teaspoon ground black pepper
1 garlic clove, minced
1/4 cup cheddar cheese

Steps:

  • Cook pasta in 2 quarts of salted boiling water until done to taste (for me, 8 minutes is right).
  • While pasta is cooking, add mustard, honey, vinegar, pepper, and garlic to the bottom of a serving dish.
  • Add hot drained cooked pasta, ham, and tomatoes to the dish and toss until coated by the dressing.
  • Top with cheddar cheese.

Gourmet Seared Tuna Nicoise With Honey and Mustard Vinaigrette image

Meaty tuna always goes well with a nicoise salad of eggs, green beans, olives and potatoes in a homemade vinaigrette. Plus, it's filling and healthy.

1 lb baby new potato, scrubbed
4 ounces fine green beans, trimmed
4 medium eggs
4 (5 ounce) tuna steaks
olive oil
mixed salad green (one bag, preferably with herbs)
2 scallions, finely sliced
20 pitted black olives, halved
1 teaspoon clear honey
2 teaspoons Dijon mustard
2 tablespoons cider vinegar
2 tablespoons olive oil
salt & freshly ground black pepper

Steps:

  • 1. Preheat the oven to 400°F Lightly oil the potatoes and place in a baking tray, bake for 40 mins or until crisp and tender. If you're short on time, simply boil them for 15 mins instead. Once the potatoes are cooked, cut them in half.
  • Whilst the potatoes are cooking, blanch the beans in boiling water for 3 mins then drain and rinse in cold water.
  • Place the eggs in a small pan, cover with cold water, bring to the boil and simmer for 6 minutes Remove from the heat, drain, then rinse in cold water. Tap the shells all over and remove. Cut each egg in half and halve them again.Whisk all the dressing ingredients together and season to taste.
  • Heat a large non-stick frying or griddle pan until hot. Brush the tuna with a little oil then add to the pan and sear for 2-3 mins on each side, depending on how pink you like your tuna. Set aside to rest.
  • Empty the salad leaves into a large bowl and add the scallions, olives, cooled green beans and half of the dressing.
  • Divide the mixture between four plates, scatter over the halved potatoes, quartered eggs and finally lay the tuna on top.
  • To finish, drizzle a little of the remaining dressing over the tuna steaks and serve.

This easy fresh grilled tuna is flavored with a honey mustard marinade. For the best flavor and texture, grill the tuna for only 4 to 5 minutes.

1/3 cup red wine vinegar
1 tablespoon spicy brown mustard
1 tablespoon honey
3 tablespoons extra virgin olive oil
Dash garlic herb seasoning
1 to 1 1/2 pounds fresh tuna steaks

Steps:

  • Combine the first 5 ingredients in a jar or covered container; shake to mix well.
  • Put tuna in a food storage bag; add about 4 tablespoons of the mustard mixture.
  • Seal the bag and let marinate for about 20 minutes.
  • Brush the grill with olive oil and heat.
  • Remove the tuna from the marinade and pour the marinade in a small saucepan.
  • Bring marinade to a full boil; remove from heat and set aside.
  • Grill the tuna over high heat for about 2 to 3 minutes on each side, or until done as desired.

Better Tuna Nicoise with Honey Mustard Dressing image

Made better with roast baby potatoes and delicious honey and mustard dressing, this is our Better Tuna Nicoise that is both healthy and filling!

200 g baby potatoes (large ones cut in half)
1/2 tsp mixed herbs
1 tbsp olive oil
2 eggs
2 tbsp capers
50 g sundried tomatoes (sliced into thin strips)
60 g spinach
160 g tinned tuna in brine or spring water (drained)
1/4 red onion (thinly sliced)
80 g cucumber (sliced)
2 tbsp olive oil (extra virgin)
1 tsp honey
1 tsp dijon mustard
1 tsp cider vinegar

Steps:

  • Preheat the oven to 220° C Fan. Place the potatoes in a large bowl, drizzle with a tbsp of olive oil, add the mixed dried herbs and some salt. Shake the bowl to cover the potatoes in seasoning and tip onto a baking tray, spread out. Cook in the oven for 35-40 minutes, turning them once halfway through, until tender and crispy and brown.
  • In the meantime, make the dressing by mixing extra virgin olive oil, mustard, honey and vinegar. Season with salt and pepper.
  • Cook the eggs in boiling water for 6-7 minutes. Then immediately place in cold water for a few minutes. Peel the eggs and cut them in half.
  • Divide the spinach between two plates. Scatter the capers, sundried tomatoes, red onion and cucumber on to. Add the tinned tuna in small piles on top.
  • Once potatoes are cooked, add them to the salad alongside the soft-boiled eggs and drizzle everything with honey-mustard dressing!
