- Cover potatoes with cold water, bring to a boil and salt the water. Boil potatoes until just tender, 12 to 15 minutes. Drain.
- Meanwhile, combine the honey, Dijon, and vinegar in a bowl then slowly whisk in the olive oil. Season with salt and pepper. To the bowl add radishes, capers, onions, celery, watercress or parsley and hot potatoes. Using a wooden spoon break up the potatoes into large chunks. Toss the potato salad, adjust salt and pepper then serve.

- Place potatoes in a saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. SPRING ASPARAGUS, HAM AND POTATO SALAD - HONEY MUSTARD DRESSING
A light, fresh and very tasty potato salad, which is more of a meal than a side dish! I made this up when I had a few spears of fresh asparagus left, some boiled potatoes and some honey roast ham in the fridge! This recipe/idea is for two people - but it can be increased with ease, hence my listing of the ingredients in numbers, rather than in ounces or grammes! The dressing can be made ahead......and, hopefully it will be warm enough to sit outside and soak up the spring or early summer sun......c'est Parfait!

- Make up the dressing by putting all the dressing ingredients into a jar and shaking it well. The dressing can be made up well in advance.
- Choose two attractive plates or bowls and start to assemble the salad.
- Place the potatoes on the plate/bowl first and then arrange the strips of ham & asparagus spears over the top - gently mix through to "just" mingle the ingredients together.
- Next, scatter the minced/finely diced red onion over and then the sliced cornichons - if you are using them.
- Pour over the honey & mustard dressing - giving the salad a liberal dousing!
- Season and scatter the chopped chives and/or the chopped chervil over the top.
- Serve with crusty bread & a glass of crisp, chilled white Chablis or Chardonnay!

- Rinse the potatoes in a colander and slice them in half.
- Boil a pot of water and add the mini potato halves to the water.
- Boil for 15-16 minutes or until the potatoes are fork tender.
- Drain off the water using a colander and set them aside to cool.
- Add 3-4 eggs to a pot with water, make sure the water covers the eggs.
- Let the eggs and the water come to a boil. Cook for 11-12 minutes for hard-boiled yolks.
- Remove the eggs form the water and let them cool before peeling and slicing.
- Grab an 11-inch non-stick skillet and place it over medium heat.
- Using kitchen shears, cut the bacon into thin strips. About ½ inch wide.
- Add the bacon to the skillet and cook it until it is crispy. Add the pieces to a paper towel to absorb any excess grease.
- Next, dice the shallots, chop the dill and dice some scallions as a garnish. Set aside.
- In a small mixing bowl, combine the honey, apple cider vinegar, stone ground mustard, salt and paprika. Mix until well combined.
- Once the potatoes have cooled, add them to a large mixing bowl, combine them with the diced shallots, chopped dill, honey mustard dressing, and bacon. Toss until everything is well coated in the dressing.
- Add the potato salad to a platter, add the sliced eggs and top it with the fresh chopped scallions and a pinch of salt and pepper.
- Serve and enjoy.
