AWESOME HONEY-MUSTARD SIMPLE SALMON
A super-simple yet tasty recipe from a very novice chef. I am a divorced father who is slowly learning to cook for myself. I have 2 teenagers who hate fish, but will often request this! It's so simple that my 14-year-old daughter has been making it herself for almost 5 years! This recipe works best with salmon pieces that are 1/2 to 3/4 pound each. Serve with some wild rice and maybe a salad, and you have a quick and tasty meal. Any brown mustard will work, but I prefer the Grey Poupon® due to the white wine flavor. Just retain the 2:1 mustard-to-honey ratio if making more sauce. The sauce also works well as a marinade if prepared in advance, and also serves well as a salad dressing.

Spread the honey mustard sauce evenly over the surface of the salmon. Cover with aluminum foil and bake for 15 to 20 minutes. Uncover and place under the broiler for 2 to 3 minutes.
- To grill. Place the salmon (already seasoned with salt) on a large, lightly oiled piece of aluminum foil. Spread the honey mustard sauce on top of the salmon. Fold both sides of the foil over the salmon and tightly close it at the top. Place on a medium-high gas grill. Cover and let cook for about 10 to 12 minutes (grill time will vary depending on the thickness of your salmon, begin to check earlier in the process). Open the top of the foil up so the fish is exposed (lots of hot steam with be released, so be careful). Continue cooking about 3 minutes or so on the grill.
- To serve. Remove from the heat. Squeeze a bit of fresh lime juice and garnish with parsley. Enjoy!

Steps:
- Preheat your air fryer to 400° for 5 minutes. If using a grill, preheat to Medium-Low (on our gas grill, this was also 400 degrees).
- Add all sauce ingredients to a small pot and bring to a bubble over medium heat. Remove from heat, then remove 6 Tablespoons of sauce and set aside (this will be used for drizzling on the finished salmon). The remaining sauce will be used for basting the salmon.
- Season the salmon with the salt, pepper and dill. I don't measure this, but a light sprinkle of each ought'a do ya. My salmon had skin on one side, so I only seasoned the flesh side, be sure to season both sides if yours doesn't.
- Spray your air fryer basket or your grill grates with non-stick cooking spray (stand back and be careful! Some flames will shoot up when you do this if using a grill). Baste the top of the salmon with the sauce and put that side (not skin side) down onto the grill grates/air fryer basket (if your salmon doesn't have skin, baste both sides).
- In 4-7 minutes when you see the color start to change (becoming more opaque and a lighter pink), carefully flip to skin side down (if your salmon doesn't have skin, be sure to baste that side before you flip). After flipping, baste the tops of the salmon with the remaining basting sauce. Cook for another 4-7 minutes or until it flakes easily with a fork. Remove from the grill/air fryer and serve with the remaining sauce that you set aside from earlier. Enjoy!
- Preheat your oven to 425 degrees. Prepare a baking sheet by lining it with parchment paper for easy cleanup! (If I don't have parchment, I just give the sheet pan a light spray of olive oil cooking spray.
- Place the salmon on the prepared baking sheet and baste the tops with the honey mustard sauce, baking for 8 minutes. Baste the salmon again (no need to flip) and cook for another 4-7 minutes, or until the thickest part of the salmon flakes easily with a fork.
