- To make the marinade, whisk together the olive oil, honey, lime juice, garlic, salt and pepper. Pour mixture over shrimp and marinate for at least 30 minutes.
- Thread shrimp onto skewers and grill for 6-8 minutes, turning once. To assemble tacos, place grilled shrimp on a lettuce leaf or tortilla and top with desired toppings such as slaw, slices of avocado, and Lime Crema (see recipe below).

HONEY LIME SHRIMP TACOS WITH CREAMY CABBAGE SLAW
Lime, avocado, and cilantro are familiar ingredients in a taco, bringing tartness, creaminess, and herby overtones, respectively. You don't expect sweetness inside a tortilla, however, which we snuck in with these honey-coated shrimp. But what a pleasant surprise the sticky stuff is: it leaves the filling dripping with succulent juices that are boosted by citrus and a smidge of optional chili heat.

- Wash and dry all produce. Zest one lime until you have 1 tsp zest, then cut into halves. Cut remaining lime in half, then cut one half into wedges. Peel, halve, and thinly slice onion. Halve, pit, and thinly slice avocado. Roughly chop cilantro.
- Add cabbage, sour cream, juice from one lime half, and a pinch of salt and pepper to a medium bowl. Toss until combined.
- Heat a large drizzle of olive oil in a large pan over medium-high heat. Add onion and season with salt and pepper. Cook, tossing occasionally, until softened and starting to brown, 3-4 minutes.
- Meanwhile, rinse shrimp and pat dry with a paper towel. Once onions are browned, add shrimp and and a pinch of chili flakes (to taste) to pan. Season with salt and pepper. Cook, tossing, until shrimp start to turn pink, 2-3 minutes. Stir in juice from 2 remaining lime halves, lime zest, and honey. Cook, stirring, until shrimp are cooked through, 1-2 minutes.
- Wrap tortillas in a damp paper towel and microwave on high until warm, about 30 seconds. TIP: Alternatively, wrap tortillas in foil and warm in oven for 5 minutes at 425 degrees.
- Fill each tortilla with shrimp mixture, slaw, avocado, and cilantro. Serve with lime wedges on the side for squeezing over.

- In a medium bowl combine the honey, lime juice, tequila, salt, cumin, chili powder and garlic powder. Add the shrimp to the marinade then cover and refrigerate for 15 to 30 minutes.
- Preheat grill or griddle pan to high heat. Thread the shrimp onto the soaked skewers. Grill the shrimp until they are just cooked through and pink with grill marks on both sides, about 2 minutes each side. Remove from the heat and let them cool. Remove tails if desired and cover to keep warm.
- In a small bowl whisk together the sour cream, mayonnaise, hot sauce, chili powder and cayenne together until completely combined. Refrigerate until ready to serve.
- Warm the tortillas on the grill or griddle. Place a small handful of the red and green cabbage on each tortilla then top each with shrimp, avocado, creamy hot sauce and cilantro, dividing evenly. Serve the tacos with lime wedges on the side.

- In a large ziploc bag, combine all the marinade ingredients. When everything is well-combined, add the shrimp, squeeze as much air as possible out of the bag, and close it up. Place it in the fridge.
- Let the shrimp marinate for 30-60 minutes, flipping the bag around once or twice during that time, so that all the shrimp stay evenly covered in the marinade.
- When you're ready to cook, take the shrimp out of the fridge and let them sit at room temperature for about 10 minutes.
- Heat a large skillet over medium-high heat; there is no need to add any oil or butter to the pan, as the marinade has enough oil in it to keep the shrimp from sticking to the pan. (If you would prefer to use the grill for these, you can thread them onto skewers and toss them on the grill at this point.).
- Add your shrimp to the pan in a single layer, making sure they are not too crowded; you can always cook them in more than one batch.
- Let them cook on one side for about a minute, until they curl up and start to turn pink.
- Flip them over, and cook for another 30 seconds or so, until the shrimp are opaque.
- Remove from the pan, and serve immediately!

- 1. Wash, peel, devein, and dry raw shrimps. Season with salt. 2. In a bowl, combine honey, lime juice, tequila, onion, cumin, and chipotle powder (if using). Mix well and toss shrimps in marinade. Chill 4 hours up to 12 hours in the refrigerator. 3. Heat grill to 400 F (205 C). Make sure to oil the grilles well. Skewer shrimps in soaked wooden sticks (this will make it easier to handle on a grill). Grill shrimps until bright or just opaque, about 2 minutes each side. Flip the shrimp skewers and cook for another 2 minutes or until they turn bright orange. Alternatively, you can also pan fry the shrimps. Set cooked shrimps aside. 4. Dice the avocados and squeeze juice from the remaining 1 lime. Thinly slice the red cabbage using a sharp knife or a mandolin. To make the dressing for the red cabbage slaw, put the lime juice, Dijon mustard, sea salt, pepper and oil in a jar or bowl. Whisk vigourously until it emulsifies. Toss the red cabbage with the lime vinaigrette. Set aside. 5. Meanwhile, to make the chipotle crema, place the chipotles in the bowl of the food processor and give it a good whirl until it is smooth. Stir in the sour cream or créme fraîche, mixing well until the colour is even. Transfer chipotle crema in a squeeze bottle. 6. To assemble the tacos, heat tortilla in a dry pan, about 1 minute per side or until lightly browned or charred. Wrap tortilla in a cloth to prevent from drying out. Set aside, covered. 7. Place some diced avocados in the middle of the tortilla, followed by the red cabbage slaw. Remove skewers from shrimps and pile on the taco. Drizzle with the chipotle crema and garnish with cilantro. Serve immediately.
