CRISPY FRIED HONEY LEMON GLAZED CAULIFLOWER

Number Of Ingredients 13

1 large cauliflower, (cut into florets)
1 cup flour
3 large eggs, (lightly beaten)
3 cups panko bread crumbs
2 tablespoons honey
2 tablespoons lemon juice
2 tablespoons soy sauce
1/2 cup water
1 teaspoon dried red chili flakes
1 clove garlic, (minced)
1 teaspoon fresh ginger, (grated)
2 teaspoons cornstarch
vegetable oil

Steps:

  • Being by setting up a dredging station. First, lightly beat the eggs in a small bowl and set aside.
  • Next, add the panko bread crumbs to a small bowl and set aside.
  • Lastly, add the cauliflower florets to a large bowl, add the flour, and toss to coat. Set aside.
  • To prepare the sauce, add all of the ingredients to the sauce pan at once, except the corn starch. Place the cornstarch in a small bowl, add one tablespoon of water, and still until the cornstarch has dissolved. Add to the sauce pan and whisk to combine all ingredients. Bring the mixture to a slight simmer and allow to thicken while you fry the cauliflower.
  • Begin by heating the vegetable oil in a deep pot to 375 degrees. (You can also use a deep fryer if you have one.)
  • Coat each cauliflower floret in the egg and then coat with the panko bread crumbs.
  • Carefully place the panko-coated cauliflower florets into the hot oil. Fry each piece until golden brown - about 3 minutes. Remove from the oil and allow to drain on a paper towel lined baking sheet.
  • Once all of the pieces are fried, increase the temperature of the oil to 385 degrees and re-fry the nuggets of cauliflower for another 30-60 seconds. This will provide a deeper colour and a better crunch. This step is completely optional!
  • Lastly, plate the cauliflower and spoon the thick, hot sauce over top. Serve immediately.

1/4 c extra-virgin olive oil
1 medium cauliflower, cored and cut into 1 inch florets
1 medium red onion, finely diced
kosher salt to taste
2 Tbsp honey
1 tsp ground coriander
1/2 tsp sweet smoked paprika
1/4 tsp crushed red pepper flakes
2 Tbsp fresh lemon juice
1/2 tsp lemon zest, finely grated
1 Tbsp fresh cilantro, chopped

Steps:

  • 1. Heat 3 tbsp. oil in a heavy duty 12-inch skillet (preferably cast iron) over medium-high heat. Add the cauliflower and 1/2 tsp. salt - stir to coat. Cook, without stirring, until the cauliflower is browned on one side; about 4 minutes. Turn each piece over and cook, without stirring, until evenly browned on the second side, about 4 minutes more. Reduce the heat to medium and continue cooking, stirring often, until browned all over, about 4 minutes longer.
  • 2. Meanwhile, in a small bowl, stir 3 tbsp. water and the remaining 1 tbsp. oil with the onion, honey, ground coriander, paprika and pepper flakes.
  • 3. Add the onion mixture to the skillet and cook, stirring occasionally, until the onion is softened, about 1 minute. Continue cooking, stirring constantly, until most of the liquid has evaporated and the cauliflower is glazed - about 4 minutes.
  • 4. Transfer to a serving bowl, stir in the lemon juice and zest and garnish with the cilantro. Serve immediately.

Inspired by Mediterranean and Moroccan dishes, this tangy, earthy roasted cauliflower salad is a satisfying vegetarian meal. Spiced cauliflower, salty halloumi, peppery arugula, buttery avocado and a honey-lemon vinaigrette fill it with contrasting textures, temperatures and flavors. There's lots of room for substitutions or additions: Swap in orange zest and juice for the preserved lemon, smashed green olives for the avocado or kale for the arugula. If looking to bulk it up, you could toss in some seared shrimp, roasted chicken, pearl couscous or whole grains.

1 large head cauliflower (about 2 pounds), cut into 1 1/2-inch wedges
1/2 cup olive oil
1 teaspoon Aleppo or 1/2 teaspoon red-pepper flakes
1 1/2 teaspoons ground coriander
3/4 teaspoon ground turmeric
Kosher salt and black pepper
1 small shallot, minced (about 1/3 cup)
1/4 cup golden raisins
1 large preserved lemon, seeded, halved, seeded, then very thinly sliced (about 3 tablespoons)
1 tablespoon red wine vinegar
1 teaspoon honey
1 (8-ounce) block halloumi
6 ounces baby arugula (about 8 packed cups)
1 large ripe avocado, halved, pitted and diced
1 cup torn fresh flat-leaf parsley leaves and tender sprigs

Steps:

  • Heat oven to 425 degrees and set a large rimmed baking sheet on the middle rack.
  • In a large bowl, toss the cauliflower with 3 tablespoons olive oil, the Aleppo, coriander, turmeric, 1 teaspoon salt and 1 teaspoon pepper. Transfer to the hot baking sheet, spread in an even layer and roast until browned in spots and crisp-tender, tossing once halfway through, 20 to 25 minutes.
  • Meanwhile, prepare the vinaigrette: In a small bowl, stir together the shallot, raisins, preserved lemon, vinegar and honey with 3 tablespoons olive oil, 1/2 teaspoon salt and 1/4 teaspoon pepper. Set aside.
  • Prepare the halloumi: Cut the halloumi into 3/4-inch cubes and pat dry using a kitchen towel or paper towels. Heat the remaining 2 tablespoons olive oil in a large cast-iron skillet over high. Add the halloumi cubes and cook, stirring frequently, until browned, 2 to 3 minutes. (You'll want to be fairly attentive, flipping frequently, as you want to make sure the cubes toast without burning or melting.) Transfer to a paper towel-lined plate and season with pepper.
  • Toss the arugula with half the vinaigrette until lightly coated and divide among plates or shallow bowls. Top with the cauliflower, halloumi and avocado. Drizzle with the remaining vinaigrette, sprinkle with parsley and serve immediately.

There aren't many cauliflower salads as vivacious as this one, which is zipped up with plenty of lemon, herbs, garlic and one minced jalapeño. It is best made a day or two ahead, which gives all the ingredients a chance to mingle, and the raw cauliflower time to soften and absorb all of the dressing's bright, complex flavors. Although this salad needs no other seasonings, you can add capers, sliced olives or crumbled feta here for even saltier tang. The pinch of red-pepper flakes here is optional, but especially good.

1 lemon, plus more lemon juice to taste
1 1/4 teaspoons fine sea salt, plus more to taste
1 large head cauliflower (about 1 3/4 pound), trimmed and cut into bite-size florets (about 8 cups)
1 jalapeño, finely chopped
2 scallions, whites and greens thinly sliced
1/2 cup chopped fresh dill or basil
1/2 cup chopped parsley, leaves and tender stems
3/4 cup extra-virgin olive oil
2 fat garlic cloves, finely grated or minced
2 teaspoons whole cumin or cracked coriander seeds
Large pinch of red-pepper flakes (optional)

Steps:

  • Finely grate the zest of the lemon into a large heatproof bowl, then halve the lemon and squeeze in juice. Stir in salt to dissolve it. Add cauliflower, jalapeño, scallions, dill and parsley and toss to combine. In a large skillet, heat olive oil until hot, but not smoking. Add garlic and cumin, and cook until fragrant, about 1 minute. Stir in red-pepper flakes.
  • Pour mixture over cauliflower and toss well. Let cool completely, then cover and refrigerate for at least 8 hours and up to 48 hours to let the flavors mingle.
  • Toss well before serving, adding more salt or a squeeze of lemon to taste. For the best flavor, serve at room temperature.
