HONEY WHITE BREAD



Honey White Bread image

Number Of Ingredients 10

1/2 cup warm water (110 degrees)
2 packages dry yeast
1 teaspoon sugar
1 1/2 cups warm whole milk (110 degrees)
6 tablespoons (3/4 stick) unsalted butter, melted and cooled
1 1/2 tablespoons honey
2 extra-large egg yolks
5 to 6 cups all-purpose flour
1 tablespoon kosher salt
1 egg white, lightly beaten

Steps:

  • Place the water in the bowl of an electric mixer fitted with a dough hook attachment. If the bowl is cold, be sure the water temperature doesn't drop below 110 degrees F. Add the yeast and sugar; stir and allow them to dissolve for 5 minutes.
  • Add the milk, butter, and honey. Mix on medium speed until blended. Add the egg yolks, 3 cups of the flour, and the salt. Mix on low speed for about 5 minutes. With the mixer still on low speed, add 2 more cups of flour. Raise the speed to medium and slowly add just enough of the remaining flour so the dough doesn't stick to the bowl. Add the flour slowly; you can always add more but you can't take it out. Knead on medium speed for about 8 minutes, adding flour as necessary.
  • Dump the dough out onto a floured surface and knead by hand for a minute, until the dough is smooth and elastic. Grease a bowl with butter, put the dough in the bowl, then turn it over so the top is lightly buttered. Cover the bowl with a damp towel and allow it to rise for one hour, until doubled in volume.
  • Grease two 9 x 5-inch loaf pans with butter. Divide the dough in half, roll each half into a loaf shape and place each in a prepared pan. Cover again with the damp towel, and allow to rise again for an hour, until doubled in volume.
  • Meanwhile, preheat the oven to 350 degrees F. When the dough is ready, brush the tops with the egg white and bake the breads for 40 to 45 minutes, until they sound hollow when tapped. Turn them out of the pans and cool completely on a wire rack before slicing.

4 3/4 To 5 3/4 cups all-purpose flour
2 cups whole wheat flour
1/3 cup honey
2 large Land O Lakes® Eggs
1 tablespoon salt
1 teaspoon sugar
Land O Lakes® Butter softened

Steps:

  • Combine milk and butter in 1-quart saucepan. Cook over medium heat 3-4 minutes or until butter is melted. Cool to warm (105°F to 115°F).
  • Dissolve yeast in warm water in bowl. Add milk mixture, 2 cupsflour, whole wheat flour, honey, eggs, salt and sugar. Beat at medium speed, scraping bowl often, until smooth. Stir in enough remaining flour to make dough easy to handle.
  • Turn dough onto lightly floured surface; knead about 5 minutes or until smooth and elastic. Place into greased bowl; turn, greased-side up. Cover; let rise in warm place 1-1 1/2 hours or until double in size. (Dough is ready if indentation remains when touched.)
  • Punch down dough; divide in half. Shape each half into loaf. Place loaves into 2 greased 9x5-inch loaf pans. Cover; let rise 45-60 minutes or until double in size.
  • Heat oven to 350°F.Bake 25-35 minutes or until loaves sound hollow when tapped. Remove from pans immediately. Brush tops of loaves with butter.

2-1/2 to 3 cups all-purpose flour
3-1/2 cups whole wheat flour, divided
2 packages (1/4 ounce each) active dry yeast
1 cup milk
1-1/4 cups water
1/4 cup honey
3 tablespoons butter
1 tablespoon salt

Steps:

  • In a bowl, combine 2 cups all-purpose flour, 2 cups whole wheat flour and yeast. In a saucepan, heat milk, water, honey, butter and salt to 120°-130°; add to flour mixture. Blend on low speed until moistened; beat on medium for 3 minutes. Gradually stir in remaining whole wheat flour and enough of the remaining all-purpose flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Shape into two loaves; place in a greased 8x4-in. loaf pans. 2-1/2 cups warm whole milk (110° to 115°)
1/3 cup honey

  • In a large bowl, dissolve yeast in warm milk. Add honey, butter, salt and 5 cups flour; beat until smooth. Add enough remaining flour to form a soft dough. , Turn onto a floured board; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. 2 cups boiling water
1 cup rolled oats
½ cup honey
2 tablespoons butter
2 teaspoons salt
1 (.25 ounce) package active dry yeast
½ cup warm water (110 degrees F/45 degrees C)
4 cups bread flour
2 tablespoons honey, warmed slightly
2 tablespoons rolled oats

Steps:

  • In a large mixing bowl, combine boiling water, oats, 1/2 cup honey, butter and salt. Let stand for 1 hour.
  • In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
  • Pour the yeast mixture into the oat mixture. Add 2 cups of flour; mix well. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 20 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into two equal pieces and form into loaves. Place the loaves into two lightly greased 9x5 inch loaf pans. Cover the loaves with a damp cloth and let rise until doubled in volume, about 40 minutes.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven for about 30 minutes or until the top is golden brown and the bottom of the loaf sounds hollow when tapped. Remove loaves from pans, brush tops of loaves with 2 tablespoons honey and sprinkle with oats.

This recipe is from an old Time-Life African cookbook. Try it warm, spread with butter and honey. It should be easy to adapt to a bread machine, if you have one that can make a 2-pound loaf.

1 package active dry yeast (rapid-rise is ok)
1/4 cup water (110º to 115º)
1 egg
1/2 cup honey
1 tablespoon ground coriander
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 1/2 teaspoons salt
1 cup milk, room temperature
6 tablespoons unsalted butter, melted
4 -4 1/2 cups flour

Steps:

  • Put water in a small bowl and sprinkle the yeast over it; let stand 2-3 minutes and stir to dissolve.
  • Combine the egg, honey, coriander, cinnamon, cloves and salt in a large bowl and mix well with a whisk or spoon.
  • Add the yeast, milk and 4 tablespoons of the melted butter and beat until well blended.
  • Stir in the flour gradually, adding only enough to form a soft dough that can be gathered into a soft ball.
  • Knead the dough on a lightly floured surface; if the dough is sticky, lightly butter your hands rather than add more flour.
  • Knead until smooth and elastic, then shape the dough into a ball and place in a large, lightly buttered bowl, cover with a towel or non-stick foil and place in a warm spot until the dough has doubled in size (if you poke it with your finger, it should not"bounce back").
  • Spread the remaining melted butter on the sides and bottom of a 3-quart round baking dish at least 3" deep.
  • Punch down the dough and knead it for 2-3 minutes.
  • Shape the dough into a round and place in the dish, pressing the dough down so it covers the bottom of the container.
  • Return the dough to the warm spot and let it rise until it reaches the top of the pan.
  • Preheat the oven to 350º.
  • Bake the bread in the middle of the oven 50-60 minutes, or until the top is crusty and golden brown.
  • Turn out of the pan and cool on a rack.

This is a very tasty bread. We use it for toast and sandwiches. It is always requested by my family for functions. I got the recipe several years ago on the internet. Sorry I can't remember who from. I sure would like to give them credit. The prep. time includes time to rise.

4 tablespoons honey
1 large egg
3 1/4 cups bread flour
4 tablespoons butter or 4 tablespoons margarine
1 1/2 teaspoons salt
1 1/2 teaspoons instant yeast

Steps:

  • Put these ingredients in your bread machine as your model of machine calls for, and let the machine do the work to mix.
  • I let it rise once then take it out and knead a little on the cutting board.
  • Put in greased loaf pan to raise again.
  • When raised as much as you want, put in 325 degree oven for 30 to 35 minutes, or until center is 190°.
  • Let Cool.

1 (.25 ounce) package rapid rise yeast
1 teaspoon white sugar
½ cup warm water (110 degrees F/45 degrees C)
1 (12 fluid ounce) can evaporated milk
¼ cup water
¼ cup melted shortening
¼ cup honey
2 teaspoons salt
2 cups whole wheat flour
3 cups bread flour
2 tablespoons butter

Steps:

  • Dissolve yeast and sugar in 1/2 cup warm water.
  • Combine milk, 1/4 cup water, shortening, honey, salt and wheat flour in food processor or bowl. Mix in yeast mixture, and let rest 15 minutes. Add bread flour, and process until dough forms a ball. Knead dough by processing an additional 80 seconds in food processor, or mix and knead by hand 10 minutes. Place the dough in a buttered bowl, and turn to coat. Cover the bowl with plastic wrap. Let dough rise for 45 minutes, or until almost doubled.
  • Punch down, and divide dough in half. Roll out each half, and pound out the bubbles. Form into loaves, and place in buttered 9x5 inch bread pans. Butter the tops of the dough, and cover loosely with plastic wrap. Let rise in a warm area until doubled; second rise should take about 30 minutes.
  • Place a small pan of water on the bottom shelf of the oven. Preheat oven to 375 degrees F (190 degrees C).
  • Bake for 25 to 35 minutes, or until tops are dark golden brown. Butter crusts while warm. Slice when cool.
