1/2 cup (1 stick) butter, softened
2/3 cup honey
1 egg
1 teaspoon vanilla extract
2 cups lowfat granola
2/3 cup oats
1 1/2 cup all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
(optional- 1/2 cup raisins)

Steps:

  • Blend the butter, honey, egg, and vanilla in a stand mixer (or use a hand-held electric mixer).
  • On low speed add the granola, oats and flour. Mix until just incorporated. Add the raisins, if using.
  • Drop in small rounds onto a prepared baking sheet covered in parchment.
  • Bake at 350 for 16-18 minutes or until barely browned. Cool on a wire rack.
  • Makes 2 and a half dozen.

2 1/2 cups dark brown sugar
1 cup unsalted butter, room temperature
2 tsp. vanilla extract
2 eggs, room remperature
1 1/2 cups all-purpose flour
1 tsp. salt
1/2 tsp. baking soda
1 cup Quaker® Oats
2 cups Quaker® Simply Granola Oats, Honey & Almonds

Steps:

  • Preheat oven to 350.
  • Combine butter and 2 cups brown sugar in bowl of stand mixer, mix on medium speed until light in color, about 5 minutes.
  • While butter and sugar are creaming, combine flour, salt, and baking soda in mixing bowl and whisk to combine.
  • Add 1 cup Quaker® Simply Granola Oats, Honey & Almonds to a food processor with 1/2 cup brown sugar and pulse until granola breaks up, combine with remaining granola and oats, stir to combine.
  • Turn stand mixer to low, add vanilla, followed by one egg at a time.
  • Remove bowl from mixer and fold in dry ingredients until just combined.
  • Mix in granola and oats mixture until combined.
  • Chill in refrigerator for at least 30 minutes before using a cookie scoop to place on baking sheet, 2 inches apart.
  • Baking for 10-12 minutes, or until edges are crispy and center is soft.

4 cups rolled oats
1 cup sliced almonds
1 cup chopped pecans
1 cup raw sunflower seeds
⅓ cup canola oil
½ cup honey
1 teaspoon vanilla extract
1 tablespoon ground cinnamon

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • In a large bowl, stir oats, nuts and sunflower kernels together. In a separate bowl, mix together oil, honey, vanilla and cinnamon. Add to dry ingredients; mix well. Spread mixture onto two ungreased baking sheets.
  • Bake in preheated oven, for 10 minutes, remove from oven and stir. Return to oven and continue baking until golden, about 10 minutes. Remove from oven and let cool completely before storing.

1/2 cup sunflower seeds
2 tablespoons flax seeds
2 tablespoons wheat germ
1/2 cup walnuts, chopped
1/2 cup slivered almonds
1/4 cup safflower oil
1/4 cup honey
1 teaspoon of high quality vanilla
1 teaspoon cinnamon
1/2 cup raisins or 1/2 cup other dried fruit
1/2 cup dried cranberries or 1/2 cup other dried fruit

Steps:

  • Preheat oven the oven to 275 degrees.
  • Mix together the oats, seeds and nuts in a large bowl.
  • Heat oil, vanilla, cinnamon, and honey together in a saucepan until blended.
  • Add honey mixture to oat mixture and stir well.
  • Spread out the granola on one or two baking sheets and bake for 50 minutes or until desired crispness. Stir occasionally to prevent mixture from clumping.

0.25 teaspoon baking powder
0.25 teaspoon baking soda

0.5 teaspoon firmly packed light brown sugar
0.25 cup white granulated sugar
1 large egg
0.75 teaspoon vanilla extract
0.25 teaspoon ground cinnamon
0.5 cup old-fashioned rolled oats

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with a silicone baking mat (such as Silpat™) or parchment paper.
  • Combine flour, salt, baking powder, and baking soda in a bowl and whisk for 30 seconds until dry ingredients are well combined.
  • Combine butter, light brown sugar, and granulated sugar in a second bowl. Cream with an electric beater until mixture is light and fluffy. Add egg and mix on high speed until well combined. Add vanilla extract and cinnamon and beat in.
  • Fold in dry ingredients with a spatula just until flour disappears. Fold in granola and oats until well combined.
  • Scoop out tablespoonfuls of dough onto the prepared baking sheet, leaving ample space between the dough balls as they will spread out, about 8 per baking sheet.

½ cup unsweetened coconut flakes
¼ cup honey
1 tablespoon coconut oil, melted
1 teaspoon vanilla extract
¾ teaspoon ground cinnamon

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Spread oats and coconut flakes onto a rimmed baking sheet.
  • Bake in the preheated oven for 8 minutes; stir oats and coconut and rotate baking sheet. Continue baking until oats and coconut are toasted, about 8 more minutes.
  • Whisk honey, coconut oil, vanilla extract, and cinnamon together in a bowl until smooth. Add oat mixture to honey mixture and stir until evenly coated.

1 cup packed light-brown sugar
2 large eggs

1/4 cup flaxseed meal (ground flaxseeds)
1/2 cup hulled pumpkin seeds (pepitas)

Steps:
