1/4 cup (4 tablespoons) butter
1/4 cup (4 tablespoons) honey
2-3 cloves garlic, (minced*)
1-2 tablespoons fresh squeezed lemon juice ((or juice of half a lemon))
4 wild caught salmon fillets (about 1/2 pound or 250 grams each), (skin off or on)
Lemon wedges ((to serve))
Salt, (to taste)

Steps:

  • Arrange oven shelf about 8-inches away from heat element in your oven. Preheat your oven to broil (or grill in Australia).
  • Place butter in a cast iron skillet (or an oven-proof frying pan if you don't have a skillet). Cook over medium heat, stirring and swirling pan occasionally for about 3 minutes, or until the foam settles; the butter begins to change in colour to golden brown and has a nutty fragrance.
  • Pour in the honey and let it dissolve into the butter. Then add in the garlic and sauté for about 1 minute until fragrant. Add in the lemon juice; stir well to combine all of the flavours together.
  • Add the salmon steaks to the butter in the pan; cook each fillet (skin-side down if there's any skin) for 3-4 minutes or until golden, while basting the tops with the pan juices. Season with salt and pepper, to taste.
  • Add the lemon wedges around the salmon. Transfer the pan to your oven to broil / grill for a further 5-6 minutes, or until the tops of the salmon are nicely charred.
  • To serve, drizzle with the reserved brown butter sauce. Serve with steamed vegetables; over rice or with a salad.

There are SO many ways to prepare salmon, and yet I'm always open to a new recipe. Salmon seems to be the most popular fish right now, so it's nice to have plenty of new ideas to change things up a bit. To keep this a guilt-free meal, serve with some steamed broccoli and brown rice.

4 (4 ounce) salmon fillets
1/4 teaspoon garlic pepper seasoning
1 tablespoon extra-virgin olive oil
2 tablespoons honey
1 teaspoon lime zest
2 tablespoons fresh lime juice
1 teaspoon low sodium soy sauce
1 tablespoon chopped fresh cilantro (optional)

Steps:

  • Preheat broiler to high. Line a rimmed baking sheet with foil and spray with nonstick cooking spray. Place fillets (skin-side down) on the baking sheet and sprinkle evenly with the garlic pepper. Place baking sheet under broiler and broil for 3 minutes.
  • Meanwhile, for the glaze, heat olive oil in a small saucepan over medium heat. Whisk in honey, lime zest, lime juice and soy sauce. Remove from heat and set aside.
  • Remove baking sheet from oven. Brush or spoon glaze evenly on the fillets. Return the baking sheet to the oven and broil for 4-7 minutes more or until the fish flakes easily with a fork. Remove from oven. Sprinkle salmon with cilantro (if desired) and serve.

8 teaspoons flour, divided
2 tablespoons honey, divided
1 lime, zest of

  • Remove browned butter from heat and add it, along with lime juice, garlic, salt and pepper to a blender. Blend on low speed for about 30 seconds, until well blended. Pour sauce into a small glass dish (note: whisk butter mixture with a fork before pouring onto salmon as it will separate, rewarm if needed).

4 boneless salmon fillets
2 tbsp unsalted butter (melted)
2 cloves minced garlic
2 tbsp honey
1/2 tsp dried parsley ((or 2 tsp fresh parsley, finely chopped))
1/4 tsp salt
1/4 tsp pepper
pinch of paprika
1 lemon sliced into half-moons

Steps:

  • Preheat the oven to 200C/400F. Line a baking tray with foil or a silicon mat.
  • Place the salmon fillets, skin-side-down on the baking tray.
  • In a small bowl, mix together the melted butter, garlic, honey, parsley, salt, pepper and paprika.
  • Pour the mixture over the salmon fillets (don't worry about any of the sauce pooling on the tray).
  • Arrange the lemon wedges on and around the salmon.
  • Place in the oven and bake for 8 minutes.

1/4 cup butter
1/3 cup honey
4 large cloves garlic (, crushed)
2 tablespoons fresh lemon juice ((juice of 1/2 a lemon))
1.2 kg | 2 1/2 pound side of salmon
Sea salt (, to taste)
Cracked pepper (, to taste (optional))
Lemon slices ((to serve))
2 tablespoons fresh chopped parsley

Steps:

  • Position a rack in the middle of the oven. Preheat oven to 375°F | 190°C. Line a baking tray / sheet with a large piece of foil, big enough to fold over and seal to create a packet (or 2 long pieces of foil over lapping each other lengthways to create your salmon packet, depending on the width of you fillet).
  • In a small saucepan, melt the butter over low-medium heat. Add the honey, garlic and lemon, and whisk until the honey has melted through the butter and the mixture is well combined.
  • Place the salmon onto lined baking tray | sheet. Pour the butter/honey mixture over the salmon, and using a pastry brush or spoon, spread evenly over the salmon. Sprinkle with a good amount of salt (about 2 teaspoons) and cracked pepper. Fold the sides of the foil over the salmon to cover and completely seal the packet closed so the butter does not leak.
  • Bake until cooked through (about 15-18 minutes, depending on the thickness of your fish and your preference of doneness). Open the foil, being careful of any escaping steam, and grill / broil under the grill / broiler for 2-3 minutes on medium heat to caramelise the top. Garnish with parsley and serve immediately with lemon slices.
