1 teaspoon salt
1/2 teaspoon cayenne pepper
1 broiler/fryer chicken (about 3 pounds), cut up
1/2 cup butter, melted, divided
1/4 cup packed brown sugar
1/4 cup honey
1/4 cup lemon juice
1 tablespoon reduced-sodium soy sauce
1-1/2 teaspoons curry powder

Steps:

  • Preheat oven to 350°. In a bowl or shallow dish, combine the flour, salt and cayenne pepper; add the chicken pieces and turn to coat. Pour 4 tablespoons butter into a 13x9-in. baking pan; place chicken in pan, turning pieces once to coat. , Bake, uncovered, 30 minutes. Combine the brown sugar, honey, lemon juice, soy sauce, curry powder and remaining butter; pour over chicken. Bake until juices run clear, 45 minutes, basting several times with pan drippings.

1 (2 to 3 pound) whole chicken, cut into pieces
½ teaspoon garlic powder
2 teaspoons salt
¼ teaspoon ground black pepper
1 egg yolk
1 ½ tablespoons honey
4 tablespoons margarine, melted

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Rub chicken pieces with garlic powder, salt and pepper. In a small bowl, beat egg yolk with honey and butter or margarine, then brush this mixture over chicken pieces. Place chicken pieces, skin side down, in a lightly greased 9x13 inch baking dish.
  • Bake at 325 degrees F (165 degrees C) for 45 to 60 minutes or until chicken is cooked through and juices run clear, basting with remaining butter or margarine. Just before serving, turn chicken over and bake for another 10 to 15 minutes to cook the skin on the other side.

A delicious and super flavorful recipe that uses the inexpensive leg quarter from the chicken and lots of veggies for a filling and healthy weeknight meal.

4 Chicken Leg Quarters, Skin On
1 Leek, Cleaned & Sliced
1 Onion, Spanish, sliced
3 cloves Garlic, Sliced
1 Zucchini, Diced
1 Shallot, Sliced
3 cups Cherry Tomatoes, Sliced in half
1 tbsp Tomato Paste
1 tsp Garlic Powder
2 tbsp Herbs de Provence
3 tbsp Olive Oil
1 tsp Balsamic Vinegar
2 tbsp Kosher Salt, total for the dish
1 tbsp Cracked Pepper
1/4 cup Parmesan Cheese, shredded

Steps:

  • Heat a large cast iron or other heavy, oven proof pot over high heat. Add the olive oil. Preheat your oven to 375 degrees.
  • Season the chicken liberally with salt and pepper on both sides. Add to the pan skin side down and leave to brown for 2-3 minutes. Flip and repeat. Remove from the pan and set aside.
  • Add all the veggies into the pan. If it looks like the pan will be too crowded, split into 2 batches. Add in the salt and pepper. After 5 minutes of cooking, add in the tomato paste. Stir to incorporate. When the veggies start browning, add in the balsamic vinegar and mix well. Immediately remove from the heat and set the veggies aside. Turn off the heat to the stove.
  • Layer the chicken in the bottom of the pan. Top with the lightly browned veggies. Cover the pot and bake in the oven for 35 minutes. Remove from the oven, serve hot into bowls and top with the parmesan cheese. Happy eating!

1 tsp garlic salt
1 dash(es) freshly ground pepper
3 1/2 lb whole chicken, quartered
6 Tbsp butter
1/4 c honey
3 Tbsp lemon juice
2 Tbsp soy sauce
1 dash(es) ground ginger

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Mix flour, garlic salt, and pepper, then coat chicken quarters thoroughly.
  • 3. Put 2 tablespoons of the butter in a shallow baking dish just large enough to hold the chicken in a single layer; put dish in oven to melt butter while oven preheats.
  • 4. Arrange chicken, skin side down, in melted butter. Bake, uncovered, 30 minutes.
  • 5. Meanwhile, melt remaining 4 tablespoons butter with honey, lemon juice, soy sauce, and ginger. After 30 minutes remove chicken from oven, turn skin side up, and cover with butter mixture. Continue baking, brushing occasionally with butter-honey sauce, until chicken is tender and richly browned (30 to 40 minutes more).
  • 6. Serve immediately.

1/2 cup of honey
1/4 cup of soy sauce
1 teaspoon of mustard
1/2 teaspoon of onion powder
1/2 teaspoon of garlic powder

Steps:

  • Preheat oven to 400 degrees. Line a pan with foil and spray with nonstick cooking spray.
  • Place the chicken on the pan in a single layer.
  • In a medium-size bowl mix the ketchup, honey, soy sauce, mustard, onion powder, and garlic powder to make the sauce.
  • Spoon the sauce evenly over the chicken.
  • Bake for approximately 40 minutes. Remove from the oven and turn all of the chicken legs over.
  • Turn the oven up to 425 degrees. Return the chicken to the oven for another 10 minutes.
  • Serve with rice or potatoes and a vegetable.
