HOMEMADE HONEY COUGH DROPS
Steps:
- In a heavy bottom sauce pot, boil sliced ginger in water. When it reaches boil, simmer until the liquid reduces to about 1/3 Cup. This will be the ginger extract.
- In the same pot with the ginger extract, add the honey and cinnamon stick and bring to boil. Watch the pot carefully because it will bubble up. Make sure it doesn't boil over or burn and be very careful not to touch the boiling honey. It's very very hot.
- Add a pinch of pink salt.
- Boil until the candy thermometer reads 250°F - hard candy temperature.
- If you are using candy mold, pour the honey mixture carefully into the mold. Set it aside until it's cooled and refrigerate until hardened.
- If you are using the powder sugar method, spread the powdered sugar (blend granulated sugar in a high power blender) on a cookie sheet about 1/2 inch in thickness. Make round circles with a back of round measuring spoon, creating small craters. Basically, you are making a "mold' right on the powder sugared surface on the cookie sheet. Pour the honey inside the craters. Yes, they will not be all perfectly uniform like silicone candy molds but you'll get the shapes you create and shape you want. You can also portion out the sizes you want too.
- When the cough drops are hard enough to pick up or unmold them if using the candy mold, roll them around in the sugar so they don't stick to each other. Store them in a glass jar in the refrigerator. I think they will last a quite awhile.
HOMEMADE HONEY LEMON COUGH DROPS

- Combine all ingredients in a small pot.
- Heat the pot slightly over medium heat and melt the ingredients together.
- The honey mixture will start to bubble, remove from heat and whisk until bubbles/foam recedes slightly. Replace on heat.
- Do this for 2.5-3 minutes, whisking every 15 seconds or so. You want the mixture to get HOT but not to outright burn.
- The mixture will start to change color (dark honey color).
- After three minutes-ish, pour the mixture into silicone molds but do not fill them all the way. You want the drops to be very small and thin.
- Let cool on the counter for twenty minutes then place in the freezer to set.
- Pop the disks out when you need them. They are chilled and soothing but they're also sticky once melted (almond-like a taffy) so try not to chew them too much!
- Makes 8 drops depending on mold.

- Cream shortening, sugar, and eggs.
- Add honey and extract, mix well.
- Add baking soda and one third of the flour.
- Mix well then add another third of flour and mix well.
- Add last third of flour and mix well.
- Add the nuts and mix.
- Grease cookie sheet and bake for 8-10 minutes in a preheated 350 degree oven.
- Cool slightly before removing cookies from cookie sheet. ENJOY!

HOMEMADE HONEY HERBAL COUGH DROPS

- Pour 1 ½ cups of boiling water over the herbs of your choice.
- Allow the herbs to steep for at least 20 minutes or until the water is cool. Squeeze the liquid out of the herbs and discard them. Strain the resulting tea.
- Combine your herbal tea with the honey in a small, deep saucepan with a heavy bottom.
- Clip a candy thermometer to the side, with the tip in the liquid but not touching the bottom. Bring to a boil and simmer, stirring frequently, until the temperature reaches 300°F.
- As the mixture thickens and condenses, you may need to tip the pan sideways to take an accurate reading.
- While the syrup is cooking down, prepare your pan. It's also a good time to cut pieces of waxed paper or cellophane to package your drops. I use wax paper, cut into 3-inch-by-4-inch rectangles.
- When your syrup reaches 300°F, or the "hard drop stage," immediately pour it into your prepared pan to cool, using a silicone scraper to get it all out of the saucepan.
- Immediately fill the saucepan with hot water.
- Allow the mixture to cool until you can just handle it without burning your hands. This will take 15 to 30 minutes.
- Lay out a clean silicone sheet or length of wax paper to work on and dust it with the anti-stick powder of your choice.
- When you can handle the mixture use a knife or scissors (dip into cold water between cuts to minimize sticking) to cut the hardening mixture into long strips and then drop-sized bits and place them on your powdered work surface.
- You can shape them a little to round the corners as you go, but don't dawdle, as the workable stage is fleeting.
- Once they are all shaped, toss them, a few at a time, into a jar with ¼ cup of your anti-stick powder, and give it a shake to cover all sides.
- Tap off the excess and wrap each one securely. Then place the wrapped drops in a jar with a tight-fitting lid.
- Store your jar in a cool location and use your drops as needed to soothe your throat and calm coughs.

- In a medium bowl, cream butter and sugar until light and fluffy. Gradually blend in the egg yolk, orange zest, and honey. Sift together the flour, baking powder, salt, and mace; stir into the creamed mixture.

- Combine the strongly brewed ginger tea, with the lemon juice and the raw honey in a tall saucepan on the stove. (the height of the saucepan is important because this will begin to foam and rise above the edges of a lower pan)
- Turn the burner to high heat and bring the entire mixture to a rapid boil. Insert a candy thermometer that attaches to the side of the pan, being careful not to touch the bottom of the pan but rest just above it. Bring the mixture to 300 degrees F. Its going to take about 10-15 minutes to get to about 250 degrees F. DO NOT WALK AWAY - because once it hits 250 degrees F it is only a mere minute or less usually that it gets to 300 degrees F and if you go over that, you're going to wind up with a pot of burnt mess. Stir occasionally to keep it from burning once it hits 250 degrees F. I don't usually stir when I am making this, but a reader had an issue where it burnt before it hit 300 degrees F. Again, I have made this dozens of times and have not had that problem, but stirring will help tremendously with that. You can also turn the burner down a tad, but it will take longer to reach your desired temperatures.
- Once it reaches 300 degrees F remove from burner immediately and pour into silicone molds. We used the one pictured below.
- Allow to "set" or "cool" in silicone pan for 1-2 hours. You may need to go longer if you are experiencing high humidity in your area. Coat with powdered sugar to keep them from sticking together. Strain away excess sugar and keep in an airtight container up to about 2 weeks. After about one and a half weeks you may notice the honey beginning to crystallize. Start using them in your tea after that.

- With a wire whisk, stir the mixture as it heats to a boil. It will become foamy and start to climb up the sides of the pan, remove it from the heat and continue to whisk it until the foam reduces and then put it back over the heat. Repeat this until a candy thermometer reads 300 degrees, you will want to check frequently because the honey heats fast and scorches easily!
- Drop a bit of the mixture into a glass of ice water (or, dip a spoon into the mixture and then quickly dip it into the ice water). If the mixture forms a hard, crunchy ball, it's ready! If not, keep up with the whisking and heating and try again in a minute or so. Once a hard ball forms in the ice water, you're good to go!
- Let the mixture cool until the foam has reduced. Then, very carefully, drizzle the candy into the mold (or onto the oiled parchment paper). Let it cool in a safe place (not the freezer or fridge) until the cough drops are hard. When they are hard, press on the back of the mold to release. Or, if you're not using a mold, break the cough drops up into pieces.
