2 Tbsp. GREY POUPON Dijon Mustard
2 Tbsp. honey
1 cup plain croutons

Steps:

  • Mix lettuce with shrimp, mushrooms and carrots in large bowl; cover. Refrigerate until ready to serve.
  • Mix egg product, oil, vinegar, mustard and honey in small bowl until well blended.

3 Tablespoons Dijon mustard
2 Tablespoons honey
1/4 cup lemon juice
2 cloves garlic (minced)
2 pounds shrimp (cleaned and de-veined)
salt and pepper to taste

Steps:

  • In a small bowl, whisk together the mustard, honey, lemon juice and garlic.
  • Peel and devein shrimp, leaving tails intact. Skewer onto metal skewers or if using wood skewers, soak the skewers in advance in water for 30 minutes. Preheat grill to 350 degrees. Salt and pepper shrimp. Place shrimp on hot grill and brush generously with glaze. Cook two minutes. Turn and cook the other side of the shrimp for two more minutes. Again, slathering with the glaze.

1/2 small shallot, finely chopped
1 teaspoon Dijon mustard
1 teaspoon honey
1 tablespoon balsamic vinegar
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 head radicchio, cut into 8 wedges
16 large shrimp, peeled and deveined
1/4 cup fresh parsley leaves

Steps:

  • Prepare a grill for medium heat.
  • Whisk together the shallots, Dijon, honey and balsamic in a medium bowl. Slowly add 3 tablespoons olive oil while whisking to emulsify. Whisk in 1/4 teaspoon salt and a few grinds of pepper.
  • Brush the radicchio on both sides with olive oil and season lightly with salt and pepper. Grill until charred in spots and slightly wilted, turning once, about 8 minutes.
  • Meanwhile, toss the shrimp with a splash of olive oil, and sprinkle with 1/4 teaspoon salt and some pepper. Grill, turning once, until just cooked through, about 3 minutes per side.
  • Divide the radicchio and shrimp among small plates, drizzle with vinaigrette and sprinkle with parsley leaves. Serve warm or at room temperature.

1 medium zucchini, diced
4 hard-boiled eggs, quartered
1 cup shredded cheddar cheese (reduced-fat is fine)
2 cups cooked corn kernels (or 2 large ears)
1/2 cup plain Greek yogurt (reduced-fat is fine)
1/3 cup healthy olive oil mayonnaise (like Spectrum or Hellmann's)
1 tablespoon Dijon mustard
2 teaspoons honey (or to taste)

Steps:

  • Layer greens on a large serving platter.
