GREEK HONEY-LEMON PORK CHOPS



Greek Honey-Lemon Pork Chops image

The marinade in this recipe not only makes chops sear beautifully but also provides enticing sweet-sour balance. The chops have to marinate at least 4 hours.

4 bone-in pork rib chops
2 tablespoons honey
2 teaspoons finely shredded lemon peel
2 tablespoons lemon juice
1 tablespoon snipped of fresh mint or 1/2 teaspoon dried mint, crushed
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon cayenne pepper

Steps:

  • Trim fat from chops.
  • Place chops in resealable plastic bag set in a shallow dish.
  • For marinade: In small bowl, combine honey, lemon peel, lemon juice, mint, oil, salt and cayenne pepper.
  • Pour over chops.
  • Seal bag; turn to coat chops.
  • Marinate in the refrigerator for 4-24 hours, turning bag occasionally.
  • Drain chops, discarding marinade.
  • For a charcoal grill, place chops on the grill rack directly over medium coals.
  • Grill, uncovered, for 11-13 minutes or until chops are slightly pink in center and juices run clear, turning once halfway through grilling.
  • For a gas grill, preheat grill, reduce heat to medium.
  • Place chops on grill rack over heat.
  • Cover and grill as above.

2 pkg ButcherBox Pork Chop, bnls / bone-in (if bone-in: 4 pkg)
1 lemon (sliced ¼" thick)
½ c lemon juice
¼ c honey
3 cloves garlic (minced)
2 Tbsp ghee
1 Tbsp rosemary (finely chopped)
1 Tbsp kosher salt
1 tsp black pepper

Steps:

  • Mix kosher salt and black pepper together and season both sides of pork chops.
  • Preheat sauté pan on medium heat, and add ghee. Once ghee is melted, sauté both sides pork chops for 5 minutes per side. Remove pork chops from pan and set aside.
  • Using the same pan, sauté garlic, rosemary and lemon slices for 2 minutes.
  • Deglaze pan with lemon juice and honey, and simmer for 3 minutes.
  • Return pork chops and any liquid from resting period to sauté pan. Baste chops for 3 minutes, or until meat thermometer inserted into thickest part reads 145°F.

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Whisk ketchup, honey, soy sauce, and garlic together in a bowl to make a glaze.
  • Sear the pork chops on both sides on the preheated grill. Lightly brush glaze onto each side of the chops as they cook; grill until no longer pink in the center, about 7 to 9 minutes per side. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

1 tablespoon all-purpose Greek seasoning
1 teaspoon grated lemon peel
2 tablespoons lemon juice
3 tablespoons honey

Steps:

  • Set oven control to broil. Place pork on rack in broiler pan. In small bowl, mix remaining ingredients. Brush honey mixture evenly on tops of pork chops.
  • Broil pork with tops 4 to 6 inches from heat 7 to 8 minutes, turning once and brushing with honey mixture, until no longer pink when cut near bone. Discard any remaining honey mixture.

4 boneless pork loin chops (6 ounces each)
1 tablespoon butter
3 tablespoons honey
2 tablespoons lemon juice
2 tablespoons orange juice
1 tablespoon soy sauce
1/8 teaspoon pepper
2 tablespoons cold butter
4 orange slices

Steps:

  • In a large skillet, brown pork chops in 1 tablespoon butter over medium heat. Combine the honey, lemon juice, orange juice, soy sauce and pepper; pour over pork., Cover and cook for 10-12 minutes or until a thermometer reads 160°, turning once. Remove pork chops to a serving plate; keep warm. Whisk cold butter into cooking juices until melted. Serve with pork. Garnish with orange slices.

1/3 cup chili sauce
1/4 cup honey

Steps:

  • Trim fat from chops and score. Heat oil in fry pan. Brown chops on both sides. Drain fat. Combine Chili sauce, honey, lemon rind and juice, salt and pepper.
  • Stir into pan. Cover and simmer over low heat about 30 minutes.
  • Remove chops from pan and keep warm.
  • Whisk together sour cream and flour. Stir into pan juices. Cook until smooth and thick. Spoon over chops.
