HONEY-CARAMELIZED ONIONS
This is stupidly easy, and looks fancy! Makes an attractive side dish on a holiday table, but be sure to make lots if your family likes onions - they'll eat it up fast!

Steps:
- Drain onions and place in small sauté/fry pan.
- Add honey and butter.
- Cook over MEDIUM heat, stirring carefully until honey and butter are completely coating onions and start to caramelize or brown. The coating should be a little bit thick and sticky, and very little moisture should remain in the pan. This should take about 15 to 20 minutes.
- Serve in a smaller, heavy bowl with a SMALL spoon, so that by the time you get to the table there will still be some left!
- Good with roasted poultry and pork.

Cut into small squares for perfect appetizers...or don't cut at all for a great night in with yourself.

- First, the long part requiring patience: make the caramelized onions for your pizza. Heat the olive oil over medium heat and add the onions, rosemary, salt, and pepper. Stir to combine thoroughly. Cook over medium until the onions become translucent. Then turn down the heat and cook slowly, stirring frequently, until golden and irresistibly fragrant. Remove from heat. That was the hard part!
- Preheat your oven to 450 degrees.
- Assemble your pizza: spray your your pan/stone lightly with cooking oil, then sprinkle it scantly with the cornmeal. Spread your prepared pizza dough over this in a circle (or awkward oval like mine). Top this with your caramelized onions. Next arrange the apple slices--I did a mix of finely sliced "honey crisp" and "granny smith" apple, using just a bit less than one apple total. Top the apple layer with the cheeses: first the brie, then just a bit of mozzarella, then the parmesan. Drizzle the pizza lightly with a good honey. Then sprinkle artistically with parsley because you've now committed to this strange pizza.
- Cook this in the preheated oven for 15-25 minutes, or until the crust is slightly crisp and the cheeses begin to turn golden-brown. Enjoy!
- Tip: a sprinkle of crushed red peppers or drizzle of extra honey and sriracha never hurts!

- Preheat oven to 400°F. Line a baking sheet with parchment paper. Arrange the naan/flatbread on the baking sheet and lightly spray or brush with water. Set aside.
- Heat the olive oil in a medium pan over medium low heat. Add the onion and season with a pinch of salt to taste and red pepper flakes. Cook the onions until it is wilted, about 3-5 minutes and stir in the honey, letting the onions caramelize. Remove from heat.

- On a large sauté pan, heat one tablespoon of olive oil and the butter, over medium high heat, until the butter melts. Add the sliced onions, lower the heat to medium, and cook until translucent. Add the vinegar and the brown sugar. Cook, stirring occasionally, for about 30 to 45 minutes or until the onions caramelize. They should be a rich, browned color. If they start drying out while cooking, add a little water. Season with salt and pepper and reserve.
- While onions are cooking, line a baking sheet with parchment paper and set the baguette slices, brushed with olive oil, on a single layer. Bring them to the oven and bake for 8 minutes or until golden and crisp. Remove from oven to assemble.
- Assemble your crostini with the caramelized onions and a slice of coat cheese on each baguette slice.

- To a large pan, add cubed cold butter and let melt on medium low flame just for a few seconds, until it becomes soft (not liquid and not brown butter). Add onions, honey and salt. Mix well until all onions are nicely coated with honey butter mix.
- Let cook for about 7-8 minutes until all of that honey butter liquid is evaporated. The onions will begin to soften up. After about 10 minutes, you would notice the onions to change colour, get stickier and begin to pan fry/ stick to the pan. Add half of the wine at this point to deglaze.
- Let cook until all the wine has evaporated (roughly 5 minutes). Continue cooking without wine for 2 more minutes. It will start to stick to the pan again, add the remaining wine to deglaze completely and continue stirring the onions (roughly 4-5 minutes)
- At this point, the onions will have reduced completely, texture would be sticky and jammy and completely soft and caramelized. Serve over burgers, in sandwiches, mix with mayo and enjoy as a dip! YUM!
