a few fresh bay leaves
½ a bunch of fresh oregano
8 figs
a few rounds of ricotta or other round cheeses, such as camembert
1 orange
extra virgin olive oil
runny honey
ciabatta
a few garlic cloves
a large handful of rocket
a few sprigs of fresh mint

Steps:

  • Preheat the oven to 200ºC/gas 6.
  • Place the bay in a roasting tray, pick over the oregano and sit the ricotta on top. Season generously.
  • Halve and scatter the figs around the cheese, finely grate over the orange zest then drizzle everything with oil and honey.
  • Rub the flavours into the cheese with your hands, then scatter over the remaining oregano, then roast for 30 to 35 minutes, or until golden and firm.
  • Slice up the ciabatta, then peel and halve the garlic cloves. Preheat a griddle pan and griddle thin slices of ciabatta. Rub the toast with the cut side of the garlic. Drizzle with oil and leave to one side.
  • Serve the roasted ricotta on a board with a stack of toast, the sticky figs and some rocket and picked fresh mint on the side.

The figs are stuffed with creamy ricotta, drizzled with honey, and sprinkled with pistachios and mint. Idyllic for when you simply can't get enough figs during their short season and want to flaunt their lovely taste and texture.

8 fresh figs
1/4 cup shelled pistachios (chopped)
2 to 4 tablespoons honey or agave nectar
1/2 cup fresh ricotta cheese
4 tablespoons mint leaves (finely chopped (optional))

Steps:

  • Using a sharp knife, split each fig down the middle, starting at the tapered stem and slicing down to the broad bottom, being careful not to cut all the way through the fig and stopping about 1/4 inch from the bottom of the fig.
  • Scatter the pistachios in a shallow bowl or on a small plate. Drizzle the honey on a small plate.
  • Using the tip of a smallish spoon, fill the split center of each fig with a generous dollop of ricotta.
  • Gently grasp each fig by its sides but without tightly squeezing it. Dip the fig, bottom first, in the honey and then in the pistachios. Arrange the figs on a large plate or platter.
  • Drizzle the figs with additional honey to taste and, if desired, sprinkle with the fresh mint. Serve as soon as you can...as if you could resist doing anything else. Originally published September 20, 2011.

Steps:

  • Preheat the broiler and position a rack 6 inches from the heat. In a food processor, combine the ricotta with the 2 tablespoons of honey and puree until very smooth. Arrange the figs cut side up on a rimmed baking sheet. Dollop 2 teaspoons of the ricotta puree on each fig and lightly drizzle with honey. Broil for about 2 minutes, until just browned in spots and the ricotta is barely melted; serve warm or at room temperature.

8 -10 fresh figs
1 -2 tablespoon macadamia nuts, chopped (or almonds chopped)
2 1/2 tablespoons brown sugar
1 cup of fresh ricotta cheese
1 tablespoon honey
1/2 teaspoon pure vanilla extract
8 -10 mint leaves (to garnish) (optional)

Steps:

  • Pre-heat the grill.
  • Trim fig stems, if any, and cut figs in half length-ways.
  • Lightly butter a shallow baking dish. Place the figs curved side down in the dish. Sprinkle each fig with a little brown sugar. Sprinkle nuts over figs, if using.
  • Grill figs for about 3-4 minutes or until the sugar starts to bubble.
  • Meanwhile, combine ricotta and honey in a bowl and stir until smooth and creamy.
  • Remove figs from the oven and gently place on serving plates with a dollop of honey ricotta.
  • Garnish with mint leaves and serve. Enjoy!

6 to 8 Mission figs, halved
1 tablespoon unsalted butter
3 tablespoons honey
Pinch ground cinnamon
Pinch kosher salt
Fresh ricotta or fat free Greek yogurt, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the figs, cut side up, in a baking dish. Melt the butter in a small saucepan over low heat, and whisk in the honey, cinnamon and salt. Drizzle the hot honey butter over the figs and roast in oven until very soft, 10 to 15 minutes.
  • Divide the fresh ricotta or fat free yogurt among 4 serving dishes and top with the warm figs and sauce. Enjoy!
  • Cook's Note: These hot figs are really great over mixed greens or even on a toasted baguette as a crostini!

1 tsp butter
8 figs
4 tbsp honey
500 grams ricotta
2 tbsp walnuts
5 tbsp honey
1 tbsp lemon juice
1 small orange
2 cinnamon sticks

Steps:

  • To make the orange sauce, combine ingredients in a small pan and bring to the boil, stirring, then simmer for about 10 minutes or until slightly sticky.
  • Set aside to cool slightly, then discard cinnamon sticks.
  • Butter a shallow baking dish and turn grill to high.
  • Wash and dry the figs, then cut in half.
  • Place cut-side up in the baking dish.
  • Pour the honey over the figs from a warm spoon, so it runs smoothly.
  • Place under the grill for 6 minutes or until the figs soften and heat through.
  • Cut the ricotta into 4 wedges.
  • Serve warm figs on a wedge of ricotta and drizzle with warm orange sauce.
  • Scatter with toasted walnuts.

4 stalks fresh rosemary, about 6 inches long
4 large fresh figs, any variety, stems trimmed, halved lengthwise
1/8 cup liquid honey
1 tablespoon lemon juice, freshly squeezed
2 ounces goat cheese, crumbled

Steps:

  • Strip the leaves from the bottom of the rosemary stems, leaving about 1 1/2 inches of leaves at the tip.
  • Place the stems in a bowl and add cold water to cover; soak for at least 30 minutes.
  • Skewer fig halves crosswise on each rosemary stem.
  • Arrange the skewers on a plate with the cut sides of the figs facing up.
  • In a small bowl, mix together honey and lemon juice.
  • Brush the honey/lemon mixture over the cut side of the figs.
  • Preheat the broiler to high.
  • Broil the figs cut side up until they are lightly browned and softened, about 1 to 2 minutes.
  • Top with cheese and place back under broiler for 1 minute.
  • Serve on the skewers while still hot.

8 large ripe figs, with stems, cut in half lengthwise

Steps:

  • Preheat the broiler, setting the rack as high as possible.
  • In a small bowl, combine the ricotta, honey, and salt.
  • Sprinkle the sugar on a small plate and dip each fig half, cut side down, into it, coating the entire surface with a thin, even layer. Place the figs, sugar side up, on a baking sheet and place it under the broiler. Broil for 4 to 6 minutes, or until all the sugar is completely melted and dark brown. Watch closely!
  • Serve with the ricotta mixture and an additional drizzle of honey
