We raise heirloom-breed chickens, so I'm always looking for chicken recipes. This one with oven baked chicken tenderloins and orange and honey flavors is tops at our house. -Beth Nafziger, Lowville, NY

1 cup dry bread crumbs
1 tablespoon grated orange zest
1 teaspoon salt
1/2 teaspoon pepper
1-1/2 pounds chicken tenderloins
1/4 cup orange juice
Olive oil-flavored cooking spray
SAUCE:
1/4 cup butter, cubed
1/2 cup honey
2 tablespoons water
1 teaspoon chicken bouillon granules

Steps:

  • Preheat oven to 425°. In a shallow bowl, mix bread crumbs, orange zest, salt and pepper. In another bowl, toss chicken with orange juice. Dip chicken in crumb mixture, patting to help coating adhere; place on a greased foil-lined baking sheet., Spritz tops with cooking spray until crumbs appear moistened. Bake 10-12 minutes or until light golden brown and chicken is no longer pink., Meanwhile, in a small saucepan, combine sauce ingredients. Bring to a boil over medium heat, stirring constantly; cook and stir 1-2 minutes or until blended. Serve with chicken.

HONEY HABANERO CHICKEN

Number Of Ingredients 2

1.75 - 2 pounds chicken drumsticks 3 tablespoons lime juice 2 tablespoons melted butter 2 tablespoons honey
1.5 teaspoons salt 2 cloves garlic, minced 1 habanero pepper, sliced or minced

Steps:

  • Toss everything together in a tight-lidded container. Shake it around. Refrigerate 4-24 hours.
  • Set oven to 425ºF. Arrange drumsticks in a baking dish and pour the marinade over. Bake 30 minutes.
  • Flip drumsticks and baste with the pan drippings (Careful! Don't burn yourself!)
  • Bake another 20 minutes or until the inside temperature of the biggest drumstick is 165ºF.

¼ cup vegetable oil
2 tablespoons honey
2 tablespoons finely chopped fresh parsley
½ teaspoon dried basil, or to taste
½ teaspoon grated orange zest

8 skinless, boneless chicken breast halves

Steps:

  • In a large resealable plastic bag, mix the orange juice, oil, honey, parsley, basil, orange zest, salt, and pepper. Place chicken in the bag, seal, and marinate in the refrigerator overnight.
  • Preheat the grill for medium heat.
  • Lightly oil the grill grate. Place the chicken on the grill, and discard marinade. Cook chicken 15 minutes, turning once, or until juices run clear.
