PAN FRIED HONEY BANANAS



Pan Fried Honey Bananas image

These Pan Fried Bananas are caramelized in honey and cinnamon for a simple and delicious treat!

2 ripe bananas
1 tbsp oil or butter*
2 tbsp honey
1/2 tsp ground cinnamon
1/8 tsp salt
On Whole Wheat Pancakes
With Homemade Vanilla Ice Cream
As a topping for Fruit Pizza
In a sandwich with peanut butter and marshmallow creme

Steps:

  • Remove the peels from the bananas and slice them 1/2" inch thick.
  • Set a nonstick skillet over medium to medium high heat** and add the oil or butter, honey, cinnamon, and salt. Stir to combine.
  • Add the banana slices, and fry for 2-3 minutes on each side, until golden and caramelized. Be sure to watch the heat and turn it down if it browns too quickly. You want enough heat to caramelize and brown the slices, but you don't want them to burn.
  • Once the bananas are cooked you can enjoy them as is, or with marshmallow creme and peanut butter in a sandwich, with Bananas Foster French Toast, in oatmeal or yogurt, over ice cream, and more. Enjoy!

1/2 cup vegetable oil
1/3 cup honey
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
1 cup pecans (, chopped)

Steps:

  • Preheat oven to 375 degrees and line a 12 cup muffin tin with muffin liners.
  • In a large bowl whisk together eggs, banana, oil, and honey.
  • Sift together flour, baking soda, cinnamon, nutmeg, and salt.
  • Whisk the dry ingredients into the wet ingredients until just combined.
  • Stir in the pecans (reserve some to sprinkle on top of muffin batter).
  • Scoop batter into muffin liners and top with remaining pecans.
  • Bake for 18-20 minutes or until a toothpick comes out clean.

1/2 cup butter or 1/2 cup margarine
3/4 cup honey
2 large eggs
1 cup mashed ripe banana
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup chopped pecans, toasted

Steps:

  • Beat butter at medium speed with mixer in a large mixing bowl; add honey, beating well. Add eggs, one at a time, beating after each addition, add the banana and mix well.
  • Combine flour, soda, and salt; stir in pecans. Add to the butter mixture, stirring just until the dry ingredients are moistened.
  • Spoon batter into a lightly greased and floured 9 x 5-inch loaf pan.
  • Bake 350°F for 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool in pan for 10 minutes; remove from pan and cool completely.

I love banana's but can't stand to eat them when they're over-ripe so I always end up binning some. In a bid to cut down on wastage I now eat this delicious baked (or you could BBQ it) banana combo for my breakfast. I like it so much now that it's gone from being a recipe I use to get rid of my over-ripe banana's to being my standard week-day breakfast! It's so versatile... great on it's own, over porridge or weetabix, on toast, with yogurt, or over ice cream... Mmmmmmm!

1 banana (nice and ripe)
2 teaspoons honey
cinnamon

Steps:

  • Pre-heat the oven to 200c (or get your BBQ nice and ready if you're BBQing).
  • Either slice the banana up into bite-sized pieces or cut it in half lengthways if you're looking for a smarter presentation or are having an ice cream banana split.
  • Place the banana on an over-sized square of tin foil and sprinkle with cinnamon (to taste).
  • Drizzle 2tsp of honey evenly over the banana and gather up the corners of the foil to create a little banana parcel.
  • Place the parcel in the oven (or on the barbie) and bake for approximately 15mins.
  • NB. Baking time depends on how you prefer your bananas - the more you bake, the more soft and gooey they get and the more the honey caramelises onto them. Personally I don't like mine too over-baked as I prefer the banana to still be a bit hard and the honey to be liquid.

1 egg
4 ½ cups whole wheat flour
1 teaspoon baking powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Lightly grease 2 large baking sheets.
  • Combine water, mashed bananas, honey, vanilla, and egg in a large bowl.
  • Stir in whole-wheat flour and baking powder.
  • Beat dough with an electric mixer on medium speed until ingredients are thoroughly combined, 1 to 2 minutes.
  • Turn dough onto a floured surface and knead until no longer sticky, 5 to 8 minutes.
  • Roll out dough to 1/4-inch thickness and cut into mini shapes with your favorite cookie cutter.
  • Place dough shapes on prepared baking sheets.
  • Bake in preheated oven until cookies are lightly browned, about 20 minutes.
  • Turn off the oven and leave cookies until thoroughly dry and crisp, 30 to 40 more minutes.
  • Remove baking sheets from oven and allow cookies to cool on pans for 10 minutes. Transfer cookies to wire rack to fully cool.
