HONEY BANANA BREAD
Banana bread sweetened with honey.

Steps:
- With a mixer, beat together the butter, egg, honey and banana.
- Mix together the flour, baking powder, baking soda and salt. Add to the creamed mixture and stir until moistened. Fold in pecans if using.
- Pour into a greased loaf pan. Bake at 350 degrees F. for 25 minutes. Turn the oven down to 300 and continue baking for around 30 minutes, or until the top springs back when lightly pressed.

A simple and delicious recipe for moist banana bread packed with saltanas and a lovely honeyed flavour. Wonderful for a late Sunday morning breakfast or elevenses with a cup of tea.

- Preheat the oven to 170C/fan 150C/gas 5 and grease a small loaf tin.
- Combine the flour, bicarbonate of soda and salt.
- Cream together the butter and brown sugar until pale. Beat in the eggs one at a time, then the bananas, saltanas and the honey.
- Stir banana mixture into the flour mixture, combining until moist.
- Bake for one hour or until a cake tester comes out of the cake clean. Leave to stand in the tin for at least 10 minutes before turning out on to a cooling rack and allowing to stand until cool.

The husband loved this for breakfast, and I thought it was a great after-dinner snack. A couple of times I even topped it with a little light whipped cream. - Preheat the oven to 350 degrees F and lightly spray a loaf pan with cooking spray.
- Mash the bananas, whisk in the applesauce, oil, sugar, honey and molasses until just combined.
- In a separate bowl, stir together the flours, soda, cinnamon and salt.
- Stir the wet and dry ingredients together until just combined.
- Spread the bread mixture evenly in the prepared pan and bake for 45-50 minutes or until lightly brown and a toothpick inserted in the middle comes out clean.

HONEY BANANA BREAD
I got this recipe from a friend, who got it at a Weight Watchers meeting. It's so delicious you won't believe you're eating low fat! It doubles perfectly (I never make just one loaf!) and if you don't have enough banana, just use applesauce for the balance. It works like a charm. Enjoy!!! 2 points per 1/16 of a loaf.

Steps:
- Preheat oven to 325°F.
- Grease an 8 x 4 loaf pan with nonstick cooking spray.
- Combine flour, brown sugar, baking powder, baking soda and nutmeg.
- Stir to mix well.
- In a separate bowl, combine banana, honey and milk. Mix well.
- Add liquid ingredients to dry, stirring just till dry are moistened.
- Spread mixture evenly in pan and bake 45 to 50 minutes, or until a wooden toothpick inserted in center of loaf comes out clean.
- Remove bread from oven and let sit for 10 minutes.
- Invert loaf onto wire rack, turn right side up, and cool before slicing and serving.
