Grilled Nectarines with Honey-Balsamic Glaze image

1/2 cup plus 2 tablespoons honey
1/4 cup balsamic vinegar
1/2 teaspoon vanilla extract
1 8-ounce container crème fraîche
6 firm but ripe nectarines, halved, pitted

Steps:

  • Whisk 1/2 cup honey, vinegar, and vanilla in small bowl. Whisk crème fraîche and remaining 2 tablespoons honey in medium bowl to blend. (Glaze and crème fraîche mixture can be made 1 day ahead. Cover separately. Refrigerate crème fraîche mixture. Rewhisk both before using.)
  • Prepare barbecue (medium-high heat). Brush nectarines generously with half of glaze. Grill until heated through, turning occasionally, about 4 minutes. Arrange 2 nectarine halves, cut side up, on each plate. Drizzle with remaining glaze. Spoon some crème fraîche mixture into center of each nectarine half and serve.

¼ cup balsamic vinegar
½ teaspoon vanilla extract
5 nectarines, sliced
¼ cup butter
½ cup sour cream

Steps:

  • Whisk honey, balsamic vinegar, and vanilla extract together in a bowl until smooth. Add nectarine slices and stir to coat.
  • Melt butter in a skillet over medium heat. Add nectarine slices, reserving honey mixture in the bowl. Cook nectarine slices over high heat for 5 minutes; flip and cook for an additional 5 minutes.
  • Transfer nectarines and butter to the honey mixture and stir in sour cream. Serve hot or cold.

1/2 cup balsamic vinegar
1/2 cup honey
Dash salt
6 medium peaches or nectarines, halved and pitted
Vanilla ice cream, optional

Steps:

  • In a small saucepan, combine vinegar, honey and salt; cook and stir over low heat until blended, 2-3 minutes. Reserve 1/3 cup mixture for brushing peaches., Bring remaining mixture to a boil over medium heat; cook and stir just until mixture begins to thicken slightly (do not overcook), 4-6 minutes. Remove from heat., Brush peaches with some of the reserved balsamic mixture. Grill, covered, on an oiled rack over medium heat until caramelized, brushing occasionally with remaining reserved balsamic mixture, 6-8 minutes on each side. Serve with glaze and, if desired, ice cream.

Nectarines cook up beautifully on the barbecue. We glaze these with honey and balsamic vinegar and drizzle them with honey vanilla cream for an easy summer dessert.

​1/2 cup sour cream
1 tbsp honey
1/2 tsp vanilla
1/2 cup honey
1/4 cup balsamic vinegar
1 tsp vanilla
8 firm ripe nectarines, halved and pitted

Steps:

  • To prepare honey cream, whisk together sour cream, 1 tbsp honey and 1/2 tsp vanilla; refrigerate.
  • Preheat natural gas barbecue on medium heat for 10 - 15 minutes.
  • To prepare glaze, combine 1/2 cup honey, vinegar and 1 tsp vanilla. Reserve half of glaze to serve with nectarines. Brush nectarines with some of the remaining glaze.
  • Place nectarines on a grill topper or directly on barbecue grid. Grill nectarines, basting occasionally with remaining glaze, until heated through. Spoon reserved glaze onto 8 dessert plates. Place 2 nectarine halves on each plate and drizzle with honey cream.
