Short on ingredients, this marinated chicken bakes up tender and flavorful. It's good enough for company. Serve with rice and salad to complete the meal.

¼ cup balsamic vinegar
¼ cup olive oil
¼ cup honey
½ teaspoon dried thyme
½ teaspoon dried rosemary
2 pounds bone-in chicken thighs, or more to taste
salt and pepper to taste

Steps:

  • Beat balsamic vinegar, olive oil, honey, thyme, and rosemary together in a bowl until smooth; pour marinade into a resealable plastic bag.
  • Season chicken thighs with salt and black pepper; add to marinade in plastic bag. Squeeze bag to remove air and seal. Marinate chicken in refrigerator for 2 to 8 hours.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Pour chicken and marinade into a baking dish.
  • Bake chicken in preheated oven until no longer pink at the bone and the juices run clear, 35 to 40 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

This is my step-daughter's favorite recipe, and it always disappears. It's very simple and tastes great around the campfire. Cooking time does not include marinating. This recipe can be customized with dried or fresh herbs.

3 -4 boneless skinless chicken breasts
2 -3 crushed garlic cloves
2 tablespoons honey
1/4 cup balsamic vinegar
2 tablespoons olive oil
2 tablespoons crushed red pepper flakes
ranch dressing, for dipping (optional)

Steps:

  • Cut each chicken breast into 3 or 4 long strips.
  • Combine all other ingredients in a small bowl and whisk until combined.
  • Place chicken in ziploc bag(s) and add marinade. Marinate for at least one hour. (For camping, prepare up to this step at home and toss in the freezer.).
  • Thread chicken onto bamboo skewers.
  • Grill over medium to hot coals or fire until juices run clear.

This is super yummy and very easy to make, you can serve it with veggies or potatoes to round it out. I got it out of a weight watchers cookbook years ago I believe, but can't find the actual recipe, most of it is just by eye.

6 boneless skinless chicken strips
salt
pepper
thyme
1 tablespoon olive oil
2 tablespoons balsamic vinegar
2 tablespoons honey

Steps:

  • Sprinkle salt, pepper & thyme evenly over both sides of chicken strips.
  • Add olive oil to pan and heat med-high.
  • When oil is hot, add chicken and fry both sides until chicken is cooked throughly
  • Remove chicken to plate and turn heat on high.
  • Add honey and vinegar to pan, stirring constantly until thickened.
  • Pour mixture over chicken and serve!

4 boneless skinless chicken breasts
1/4 cup balsamic vinegar
1/4 cup honey
3/4 cup crushed corn flakes

Steps:

  • Preheat oven to 350 degrees.
  • In a medium bowl, mix honey and vinegar until blended (this will take a few minutes to combine).
  • Dip chicken breasts in honey mixture until coated.
  • Then coat in corn flakes Put in 8 x 8 pan.
  • Repeat with all chicken breasts.
  • Drizzle with remaining honey mixture.
  • Bake at 350 degrees for 30 minutes.

This is one of the Freezer Meals I made at my Comfort Foods Workshop. It might be my favorite, but they've all been so good!

12 skinless chicken drumsticks (or 6 chicken breasts, I de-skinned my drumsticks)
1/2 cup olive oil (Wildtree European Dipping Oil - Mediterranean Balsamic)
1/2 cup honey
1/2 cup brown sugar
1/4 cup low sodium soy sauce

Steps:

  • Mix the European Dipping Oil, honey, brown sugar, and soy sauce in a freezer bag. Shake and squeeze the contents of the bad to dissolve the honey and brown sugar. Add the chicken to the bag. Remove the air and either marinate 2 hours or freeze. Defrost in fridge.
  • Preheat oven to 450 degrees. Place the drumsticks on a foil-lined and greased baking sheet (VERY IMPORTANT to not skip this step... unless you want to spend precious time over your kitchen sink scrubbing away). Bake until the skin is caramelized and very dark in spots, about 20-30 minutes. This also can be done on the grill and works just as well.
  • Meanwhile, place leftover marinade in a small saucepan. Bring the marinade to a boil for 5 minutes, in order to kill bacteria. Reduce the heat to a simmer and cook until thick, about 15-20 minutes and set aside. Use a pastry brush to brush the cooked marinade onto the cooked chicken or serve marinade alongside as a sauce/gravy.

In the sixties I was a Camp Fire Girl and this is a recipe we learned to make and cook over a campfire. We made ours with a pork chop, potatoes, carrots and onion. I've tried to revise it so you can use any of your families favorite vegetables and meat. You could make these before you leave home and put them in a waterproof container in your ice chest. List of meats that work good: chicken tenders, smoked sausage slices, ground beef patties, ground turkey patties, thin boneless pork chops. List of vegetables that work good: carrots, green beans, corn, mixed vegetables, etc. (Vegetables can be fresh, frozen or canned). Be creative!

1/2 lb meat
1 cup potato, sliced
1 cup carrot, sliced
1/2 cup onion, sliced
4 teaspoons butter
garlic powder
salt
pepper
cooking spray
aluminum foil

Steps:

  • Spray 18-inch square of aluminum foil with cooking spray.
  • Place 1/4 of the meat in center of foil.
  • Place 1/4 of the vegetables on top of meat.
  • Season with butter, salt, garlic powder and pepper to taste.
  • Fold top and sides of foil several times to seal food.
  • THREE WAYS TO COOK: Always place seam side up when cooking. You may want to double wrap if cooking on a campfire or grill.
  • •CAMPFIRE: Place on hot coals near the edge of your campfire and allow to cook 25-30 minutes, or until meat is done.
  • •GRILL: Place on medium/hot grill for 40 minutes; rotate 1/2 way through cook time.
  • •OVEN: Preheat oven to 350°F Place on cookie sheet or cooking stone; bake for 30 to 45 minutes, or until meat is done.
  • OPEN CAREFULLY!
