YUMMY HONEY CHICKEN KABOBS
Honey chicken kabobs with veggies. You can marinate overnight and make these kabobs for an outdoor barbecue as a tasty alternative to the usual barbecue fare! Fresh mushrooms and cherry tomatoes can also be used. (This can also be done in the broiler.)

Steps:
- In a large bowl, whisk together oil, honey, soy sauce, and pepper. Before adding chicken, reserve a small amount of marinade to brush onto kabobs while cooking. Place the chicken, garlic, onions and peppers in the bowl, and marinate in the refrigerator at least 2 hours (the longer the better).
- Preheat the grill for high heat.
- Drain marinade from the chicken and vegetables, and discard marinade. Thread chicken and vegetables alternately onto the skewers.
- Lightly oil the grill grate. Place the skewers on the grill. Cook for 12 to 15 minutes, until chicken juices run clear. Turn and brush with reserved marinade frequently.

Mushrooms and bite-size pieces of chicken get a quick marinade in a honey-balsamic vinaigrette mixture to make these easy kabobs.

Steps:
- Mix first 4 ingredients until blended. Pour half the dressing mixture over combined chicken and mushrooms in shallow dish; stir to evenly coat ingredients with dressing mixture. Refrigerate 30 min. to marinate.
- Heat grill to medium-high heat. Drain marinated ingredients; discard marinade. Thread chicken and mushrooms alternately onto 4 skewers. Grill 6 to 8 min. or until chicken is done, turning and brushing occasionally with remaining dressing mixture.
- Place lettuce and croutons in large bowl. Add ranch dressing; toss lightly. Spoon onto 4 serving plates; top with skewers.

- Beat balsamic vinegar, olive oil, honey, thyme, and rosemary together in a bowl until smooth; pour marinade into a resealable plastic bag.
- Season chicken thighs with salt and black pepper; add to marinade in plastic bag. Squeeze bag to remove air and seal. Marinate chicken in refrigerator for 2 to 8 hours.
- Preheat oven to 375 degrees F (190 degrees C).
- Pour chicken and marinade into a baking dish.
- Bake chicken in preheated oven until no longer pink at the bone and the juices run clear, 35 to 40 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
