HAM BONE AND BEAN SOUP
Don't throw away the ham bone -- make bean soup! Plan a little bit ahead and use a ham bone to make this gluten-free soup. With just a few basic ingredients you can create a delicious comforting meal from leftovers.

Steps:
- Place bean mix into a large bowl and cover with several inches of water; soak for at least 24 hours. Drain completely.
- Bring chicken stock to a boil in a pot large enough to hold the beans and, eventually, the ham bone. Add the soaked beans; reduce heat and simmer until tender, about 1 hour.
- Bring stock and beans back to a boil. Add ham bone, onion, carrots, celery, garlic, and bay leaves. Reduce heat to low and simmer until vegetables are soft, about 1 hour. Add chopped ham, liquid smoke, and mustard powder. Stir and let simmer until flavors blend, about 30 minutes more.
- Remove ham bone from the soup. Season with salt and pepper.

POTATO AND HAM STEW
This is an awesome stew to make with a leftover ham bone and ham chunks! Great to eat on a cold day and will make your home smell wonderful. This recipe is soy free! Serve with warm biscuits or over a baked potato.

- Combine ham bone, potatoes, onion, sweet peas, ham, carrots, and celery in a large pot; pour in enough water to cover all ingredients. Pour in coconut and season with salt and pepper. Bring soup to a boil, reduce heat, and simmer until flavors have blended, about 4 hours. Discard ham bone before serving.

SMOKED HAM, BARLEY, AND VEGETABLE SOUP

- Bring broth and ham hocks to boil in large pot. Cover, reduce heat to medium-low and simmer 15 minutes. Add diced potatoes, tomatoes with juices, onion, carrots, celery, barley, and oregano. Bring to boil. Reduce heat to medium-low; simmer uncovered until meat and barley are tender, about 1 hour.
- Using tongs, remove ham hocks from soup. Cut meat off bones and chop coarsely. Return meat to soup; discard bones. (Can be prepared 2 days ahead. Refrigerate uncovered until cold, then cover and refrigerate. Bring to simmer before continuing.) Add green beans; simmer until beans are tender, about 15 minutes. Season soup to taste with salt and pepper.

- Ham-Bone Stew In a heavy Dutch oven heat over medium-high heat 2 tablespoons corn oil Sauté until tender (about 5 minutes): 1 large onion, chopped 3 large garlic cloves, finely chopped Add and stir to mix through: 1 1/2 teaspoons ground cumin 1 teaspoon dried thyme, crumbled 1 bay leaf 1/2 teaspoon dried crushed red pepper Then add and simmer for about 45 minutes to an hour 2 14 1/2-ounce cans chicken broth 1 14 1/2-ounce can sliced stewed tomatoes 1 ham bone with some meat on it (or 1 1/2 cups diced HoneyBaked Ham®-reduce cooking time slightly) Remove bone from soup, let cool to handle and then scrape the meat off of it and return the meat to pot. Then add and simmer for an additional 15 minutes. Season to taste with salt and pepper. Ladle into bowls, top with a small bit of Shredded cabbage Or chopped cilantro and serve. Serves 6
HAM BONE & VEGETABLE SOUP

Steps:
- In a large pot or dutch oven cook bacon until done but not crispy. Remove from pot and set aside. Leave bacon grease in pot.
- Add onion, celery and carrots to bacon grease. Saute for 5 minutes.
- Add garlic, thyme, cumin and oregano to onion mixture. Cook for additional 5 minutes.
- Add bacon and mix well.
- Add chicken broth, rinsed black beans and ham bone. Cook for 2 hours over medium heat.
- Remove ham bone and cut off any meat still on it.
- Place ham in soup. Add cayenne pepper and lime juice and cook for 30 minutes longer.
- Serve immediately.
