Steps:
- Make marinade by mixing together mustard, honey, and lemon juice. Add chicken breasts and refrigerate for two hours.
- Preheat oven to 350 degrees F. Heat a small amount of oil (canola or vegetable) in a skillet and add chicken breasts, discarding marinade. Cook chicken a few minutes on each side. Set aside.
- Scrape out most of the juices from the pan, and add mushrooms. Saute mushrooms until tender (a few minutes).
- Assemble chicken in a large baking dish: chicken, then bacon, then mushrooms, then cheese.
- Bake at 350 degrees F for about 20 minutes, until chicken is cooked through. Sprinkle with chopped parsley before serving.

Steps:
- Cut bacon into 1/2 inch pieces.
- Cut the chicken across the grain into 1/2 inch slices and sprinkle with salt.
- Cut the scallions, including the green tops, into thin slices.
- Brown the bacon in a large frying pan.
- Remove it from pan.
- Put half the chicken in the pan and cook over medium-high heat, stirring frequently, about 3 minutes.
- Set aside with cooked bacon.
- Cook remaining chicken in the same way.
- Return all the chicken and bacon to the pan and cook for another 5 minutes, until chicken is done.
- Add the wine or stock and stir to deglaze the bottom of the pan.
- Stir in the scallions.
- Season to taste with salt and pepper.

- Mix brown sugar and chilli powder together in a bowl.
- Coat your bacon with the mixture. Making sure both sides or pretty much evenly coated.
- Put your bacon in a pan and bake at 400 degrees for 20 minutes. Your bacon will come out crispy and sweet.

- Brown chicken: Heat oil in a wide skillet over medium-high. Add chicken breasts and sear/brown well on each side (it doesn’t have to be cooked through yet, just nicely browned). Remove from skillet and cover on a plate.
- Sauté aromatics: Bring pan back up to medium-high heat (do not drain or wipe! That’s delicious flavor in there!) and add bacon. Cook for a minute, then stir in onion and garlic. Sauté until softened, about 1 minute.
- Deglaze pan: Pour chicken broth (OR white wine) into skillet and bring to a boil, scratching any browned bits off the bottom. Stir in both mustards and season with salt and pepper.
- Cook chicken: Add rosemary sprigs and seared chicken to skillet with sauce and cover with a lid. Gently simmer for about 6-10 minutes (exact time depends on size of chicken breasts), turning chicken once halfway through. Once internal temperature of chicken registers 165°F (74°C) at thickest part, remove chicken to a clean serving plate and cover.
