A twist on a traditional strudel using honey in place of sugar and olive oil in place of butter, you will love this healthier version of an apples and honey strudel.

4 apples such as Granny Smith or Honeycrisp, peeled, cored, and cut into quarters and then cut crosswise into ¼-inch pieces
2 tablespoons lemon juice
⅓ cup honey
1½ teaspoons cinnamon plus ½ teaspoon for sprinkling
½ teaspoon kosher or sea salt
½ cup dried and chopped apricots or raisins
½ cup dried bread crumbs
8 phyllo sheets, thawed
½ cup extra virgin olive oil
Garnish: drizzle of honey for serving

Steps:

  • Preheat oven to 375°F. Line a baking sheet with parchment paper. In a mixing bowl, toss apples, lemon juice, honey, cinnamon, salt, apricots or raisins, and bread crumbs. Set aside. Lay 1 sheet of phyllo on lined pan. Brush with evoo and continue layering and brushing remaining phyllo. Scatter apples on phyllo, being sure to leave a ½-inch border. Roll phyllo, starting on the long side, to enclose filling. Tuck seam under. Brush top with evoo and sprinkle with a dusting of cinnamon. Bake at 375°F for 45 minutes or until golden brown. Slice with a serrated knife and drizzle with honey before serving.

5 medium apples, peeled and chopped (5 cups)
3/4 cup apple cider or juice
1/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1 frozen puff pastry sheet, thawed
1/4 cup fat-free caramel ice cream topping
1 large egg
1 tablespoon water
1 tablespoon coarse sugar
Optional: Sweetened whipped cream and additional caramel ice cream topping

Steps:

  • Preheat oven to 375°. In a large saucepan, combine the first 6 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, 15-20 minutes or until apples are tender, stirring occasionally. Cool completely., Unfold puff pastry onto a large sheet of parchment; roll into a 16x12-in. rectangle. Transfer parchment and pastry to a baking sheet, placing a short side of the rectangle facing you. Using a slotted spoon, arrange apples on bottom half of pastry to within 1 in. of edges. Drizzle apples with caramel topping. Roll up jelly-roll style, starting with the bottom side. Pinch seams to seal, and tuck ends under. , In a small bowl, whisk egg with water; brush over pastry. Sprinkle with coarse sugar. Cut slits in top. Bake 25-30 minutes or until golden brown. If desired, serve with whipped cream and additional caramel topping.

4 apples - peeled, cored, and chopped
½ cup raisins
¾ cup white sugar
½ cup chopped walnuts
2 teaspoons ground cinnamon
½ (17.5 ounce) package frozen puff pastry, thawed
1 tablespoon all-purpose flour
1 egg, lightly beaten
1 tablespoon white sugar, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Combine apples, 3/4 cup sugar, raisins, walnuts, and cinnamon in a large bowl for the filling.
  • Dust a flat work surface lightly with flour. Unroll puff pastry and sprinkle lightly with flour. Roll out slightly and mark into 3 equal sections. Spoon filling into the central section then fold over the section on the left and brush with egg. Fold the right section on top, just like a letter. Make shallow diagonal cuts in the top layer of the apple strudel. Brush with egg and sprinkle with 1 tablespoon sugar.
  • Bake in the preheated oven until apple studel is puffed up and golden, 25 to 30 minutes.

1 Granny Smith apple - peeled, cored and coarsely shredded
3 Granny Smith apples - peeled, cored and sliced
1 cup brown sugar
1 cup golden raisins
1 sheet frozen puff pastry, thawed
1 egg
¼ cup milk

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Place apples in a large bowl. Stir in brown sugar and golden raisins; set aside. Place puff pastry on baking sheet. Roll lightly with a rolling pin. Arrange apple filling down the middle of the pastry lengthwise. Fold the pastry lengthwise around the mixture. Seal edges of pastry by using a bit of water on your fingers, and rubbing the pastry edges together. Whisk egg and milk together, and brush onto top of pastry.
  • Bake in preheated oven for 35 to 40 minutes, or until golden brown.

Yield 4 strudels

Number Of Ingredients 10

2 tablespoons butter
5 Granny Smith apples, peeled, halved, cored, and diced
1 cup apple juice, divided
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 tablespoon cornstarch
1 tablespoon honey
½ (16-ounce) box frozen phyllo dough, thawed
Butter-flavored nonstick cooking spray
Confectioners' sugar

Steps:

  • In a large skillet, melt butter over medium heat. Add apples, and cook, stirring frequently, for 2 minutes. Add ¾ cup apple juice, cinnamon, and nutmeg. Bring to a boil; reduce heat, and simmer for 8 minutes or until apples are tender.
  • In a small bowl, stir together cornstarch and remaining ¼ cup apple juice. Add to apple mixture, and cook, stirring constantly, for 1 minute or until mixture is very thick. Stir in honey. Let cool to room temperature, then cover and refrigerate for at least 1 hour or for up to 3 days.
  • Preheat oven to 400°. Line baking sheets with parchment paper.
  • On a clean, flat surface, unfold phyllo dough. Stack 5 phyllo sheets on top of each other, spraying each sheet with butter-flavored cooking spray. Spoon 1 cup apple mixture down center of phyllo stacks, leaving a 1-inch border on short sides. Fold short sides over filling; spray with cooking spray. Fold one long side over apple mixture; spray with cooking spray. Fold remaining long side of phyllo sheets over to completely enclose filling; spray with cooking spray. Carefully place strudel, seam side down, on prepared pans. Using a sharp knife, make 1-inch slits into strudel at 1-inch intervals, and spray with cooking spray. Repeat procedure with remaining phyllo sheets, apple mixture, and cooking spray.
  • Bake for 12 minutes or until golden brown. Let cool for 15 minutes. Sprinkle with confectioners' sugar, and serve warm.

Remove from heat; cool slightly., On 2 parchment-lined baking sheets, roll out each pastry into a 14x12-in. rectangle. Place half the onion mixture down the center of each rectangle; top with cheese and bacon., On each long side, cut eight 1-3/4-in.-wide strips.
